Abstract

PURPOSE:To provide a novel starch sugar containing pentose or higher sugar such as maltotetraose or maltopentaose and a triose or lower sugar such as glucose at a specific ratio, having low sweetness and low viscosity and useful as a sweetener having thick sweetness. CONSTITUTION:The objective starch sugar composed mainly of maltotetraose and containing 70-95wt.% of maltotetraose, <=12wt.% of pentose or higher sugar such as maltohexose and <=18wt.% of triose or lower sugar composed of glucose, maltose and maltotriose is produced by saccharifying a liquefied starch liquid with a maltotetraose-producing enzyme and, as necessary, with a debranching enzyme and, after or simultaneous to the saccharification reaction, subjecting the treated product to fractionation and purification.
