Abstract
La presente invención se refiere a un jarabe reducido en azúcar que tiene una viscosidad ventajosamente baja preparado por hidrólisis del almidón o material amiláceo usando un tipo particular de enzima alfa amilasa la cual proporciona una distribución de sacárido que tiene un contenido bajo de DP1-2 y bajo de DP11+. El contenido de DP4 del jarabe puede ser favorablemente incrementado usando una enzima alfa amilasa maltotetragénica en combinación con la enzima alfa amilasa mencionada anteriormente. El jarabe es útil en la producción de composiciones para alimento, bebidas, forraje animal, salud y nutrición animal, farmacéutico, y cosmético, y puede ser combinado con un endulzante de alta intensidad para proporcionar una composición capaz de ser sustituida por jarabes de maíz convencionales.
