Abstract

Productos lácteos reducidos en lactosa, y particularmente productos lácteos reducidos en lactosa con larga vida de almacenamiento. Además, la solicitud se relaciona con un método para producir tales productos.Reivindicación 1: Un método para elaborar un producto lácteo envasado reducido en lactosa, que comprende los siguientes pasos: a) proveer un material de partida lácteo reducido en lactosa; b) someter un derivado lácteo obtenido de dicho material de partida lácteo a un tratamiento a una temperatura elevada (HT), donde el derivado lácteo se calienta a una temperatura en el rango de entre 140 y 180ºC, se mantiene a una temperatura en dicho rango durante un período de a lo sumo 200 milisegundos y finalmente se enfría; y c) envasar al producto lácteo reducido en lactosa obtenido a partir del derivado lácteo que fue sometido al tratamiento a HT.
