Abstract

La presente invencion se refiere a una bacteria de la especie Lactobacillus fermentum donde la bacteria se caracteriza porque aumenta el pH de un producto fermentado de la leche que comprende el Lactobacillus fermentum durante el almacenamiento despues de la fermentacion en comparacion con un producto fermentado de la leche con el mismo cultivo iniciador que no contiene el Lactobacillus fermentum. La invencion tambien se refiere a composiciones que comprenden la bacteria, metodos para producir productos fermentados de la leche que usan la bacteria y los productos asi obtenidos
