Abstract
a presente invenção refere-se a uma bactéria da espécie lactobacillus fermentum, em que a bactéria é caracterizada por aumentar o ph de um produto de leite fermentado compreendendo o lactobacillus fermentum durante o armazenamento após a fermenta-ção, em comparação com um produto de leite fermentado com a mesma cultura iniciadora que não contém o lactobacillus fermentum. em uma modalidade relacionada, a presente invenção proporciona uma bactéria da espécie lactobacillus fermentum, caracterizada pelo fato de um produto de leite fermentado compreendendo o lactobacillus fermentum manter um ph acima de 4,0 quando armazenado durante pelo menos 14 dias a 25°c, em que o produto de leite fermentado é obtido por um método que compreende incubar um leite com o lactobacillus fermentum em uma concentração de pelo menos 107 ufc/g e com uma cultura iniciadora; fermentar até atingir um ph de 4,6; agitar o produto fermentado e arrefecer. a invenção refere-se ainda a composições compreendendo as bactérias, métodos para produzir produtos lácteos fermentados utilizando as bactérias e aos produtos assim obtidos.
