Abstract

Настоящее изобретение относится к бактерии вида Lactobacillus fermentum, отличающейся тем, что она увеличивает pH ферментированного молочного продукта, содержащего Lactobacillus fermentum, на протяжении хранения после ферментации по сравнению с молочным продуктом, ферментированным такой же заквасочной культурой, не содержащей Lactobacillus fermentum. В родственном воплощении согласно настоящему изобретению предложена бактерия вида Lactobacillus fermentum, отличающаяся тем, что ферментированный молочный продукт, содержащий Lactobacillus fermentum, поддерживает pH выше 4,0 при хранении в течение по меньшей мере 14 суток при 25°C, где указанный ферментированный молочный продукт получают способом, включающим инкубирование молока с Lactobacillus fermentum в концентрации по меньшей мере 10КОЕ/г и с заквасочной культурой, ферментирование до достижения pH 4,6, встряхивание ферментированного продукта и охлаждение. Изобретение дополнительно относится к композициям, содержащим указанные бактерии, способам получения ферментированных молочных продуктов с использованием указанных бактерий и к продуктам, полученным таким образом.
