Abstract

Un proceso para preparar un producto a partir de material vegetal que comprende los pasos de proporcionar una materia vegetal disociada que comprende <10% (p/p) de almidón y <10% (p/p) de aceite/lípidos; ajustar el pH de la materia vegetal disociada hasta un valor de pH 3,5 o inferior, para obtener una suspensión ácida; calentar la suspensión ácida hasta una temperatura en el intervalo de 50ºC a 80ºC; aislar el producto de la suspensión ácida calentada. El producto puede ser un producto proteínico o un producto no proteínico. En particular, el proceso proporciona un producto proteínico con contenido reducido de componentes no proteínicos de valor nutricional negativo.
