Abstract
La presente utiliza un novedoso cóctel de enzimas que comprende una enzima proteasa fúngica o una mezcla de enzimas proteasas fúngicas que tiene ambas actividades de endo y de exo-peptidasa para hidrolizar proteínas de soja mientras se evitan sustancialmente los aminoácidos libres y los péptidos de bajo peso molecular que imparten un sabor amargo o indeseable al hidrolizado. El hidrolizado, y más preferiblemente la proteína de soja soluble contenida en él, es utilizado en un producto alimenticio tal como, por ejemplo, bebidas con alto contenido en proteínas, bebidas para deportes, bebidas nutricionales balanceadas, mezclas de jugos de frutas, barras para salud/nutrición aderezo para ensaladas, productos cárneos, bocadillos, postres, confituras, suplementos nutricionales y lo similar.
