Abstract
Productos alimenticios en emulsiones "aceite en agua" que comprenden microorganismos deseables vivos que tienen una buena longevidad en los productos. En particular, se brinda una emulsión "aceite en agua" comestible que comprende entre 30 y 75% del peso de aceite, agua, microorganismos vivos, y un sistema de conservación, y que tiene un contenido de ácido comestible en al fase continua acuosa de la emulsión que oscila entre 0,1 y 3% del peso y un pH a 20° C que no es inferior a 4,0 .
