Abstract
"EMULSãO COMESTìVEL DO TIPO óLEO EM áGUA". A presente invenção apresenta produtos alimentícios em emulsão do tipo óleo em água que compreendem os microorganismos vivos desejáveis que têm uma boa longevidade nos produtos. Em particular, ela apresenta uma emulsão do tipo óleo em água comestível que compreende de 30 a 75% em peso de óleo, água, microorganismos vivos, e um sistema conservante, e tem um teor de ácido comestível na fase contínua aquosa da emulsão na faixa de 0,1 a 3 % em peso e tem um pH a 20<198>C de não menos do que 4,0.
