Abstract

"EMULSãO COMESTìVEL DE óLEO EM áGUA E SEUS PROCESSOS PARA PREPARAçãO". A presente invenção fornece método simples e eficaz de preparação de produtos alimentícios em emuLsão que compreendem microorganismos desejáveis vivos que possuem boa longevidade nos produtos. Particularmente, ela fornece um processo de preparação de emulsão de óleo em água comestível que compreende microorganismos vivos, através da emulsificação de mistura comestível que compreende óleo, água, microorganismos vivos, emulsificante e sistema de preservação, em que o processo é conduzido sob temperatura de 35<198>C ou menos, ou sem etapa de tratamento a quente. As emulsões são armazenadas sob temperatura de 8<198>C ou menos após a preparação. Também são fornecidos produtos fabricados de acordo com o processo.
