Abstract
Un método simple y eficaz para preparar productos alimenticios en emulsión, comprenden microorganismos deseables vivos que tienen una buena longevidad en los productos. En particular, se brinda un procedimiento para la preparación de una emulsión "aceite en agua" comestible que comprende microorganismos vivos, que consiste en emulsionar una mezcla comestible que comprende aceite, agua, microorganismos vivos, emulsionante y un sistema de conservación, y dicho procedimiento se lleva a cabo a una temperatura de 35° C o menos, o sin una etapa de tratamiento térmico. Las emulsiones se almacenan a una temperatura de 8° C o menos después de la preparación. También se brinda productos producidos de acuerdo con el procedimiento.
