Abstract

Un producto alimenticio líquido, fluido o transferible mediante cuchara, que tiene un pH que oscila entre 3 y 5, y que comprende al menos una proteína no animal que tiene una solubilidad en agua que es menor en un pH 3 que en un pH 5, un ácido comestible, una sal de un ácido orgánico comestible, y en el cual 25% del peso o más de la proteína y al menos una parte de la sal se disuelven en el producto. Los productos presentan una buena combinación de sabor ácido y estabilidad física. Un método para elaborar el producto alimenticio.
