Abstract
Se describe una masa de papa y el método para fabricar la misma. La masa de papa puede ser usada para producir productos alimenticios tales como papas en puré, pastelitos de papa, panqueques de papa y bocaditos de papa. La masa de papa también puede ser usada para formar productos de papa deshidratados tales como hojuelas, gránulos, aglomerados, hojas, piezas, trocitos, harina y en partículas. Los productos de papa deshidratados son adecuados para usarse en una amplia variedad de productos alimenticios tales como papas en puré, pastelitos de papa, panqueques de papa, bombitas de papa, panes y salsas. Los productos alimenticios hechos de la masa y/o de los productos deshidratados producidos con la misma tiene un sabor a papa mejorado y una textura mejorada.
