其中,香精为草莓香精;
植物油为花生油;
改性马铃薯淀粉按照以下工艺进行制备:将马铃薯淀粉与乙醇水溶液混合后充分搅拌,调节体系pH值,然后进行超声处理,过滤,干燥,粉碎,与醋酸酐、N,N-亚甲基双丙烯酰胺、海藻酸钠、黄原胶、壳聚糖、苯甲酸、蔗糖酯、去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。

本发明提出的一种营养保健薯条,其原料按重量份包括:其原料按重量份包括:改性马铃薯淀粉120份、大米粉330份、蛋粉20份、藕粉6.5份、姜粉1.5份、安赛蜜0.35份、白砂糖3份、麦芽糖4份、食盐1.5份、香精0.3份、山药9份、枸杞3份、丁香4份、甘草2份、杜仲5份、五味子3份、植物油4份。
其中,香精由柠檬香精、薄荷香精按重量比为1:1组成;
植物油为花生油、大豆油按重量比为2:1组成的混合物;
改性马铃薯淀粉按照以下工艺进行制备:改性马铃薯淀粉按照以下工艺进行制备:按重量份将80份马铃薯淀粉与220份乙醇水溶液混合后充分搅拌,调节体系pH值为6.5,然后进行超声处理,超声功率为120W,超声频率为16KHz,超声时间为18min,过滤,干燥,粉碎,与1份醋酸酐、4份N,N-亚甲基双丙烯酰胺、0.4份海藻酸钠、0.6份黄原胶、0.2份壳聚糖、0.1份苯甲酸、2份蔗糖酯、130份去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。

本发明提出的一种营养保健薯条,其原料按重量份包括:其原料按重量份包括:改性马铃薯淀粉110份、大米粉30份、蛋粉18份、藕粉6.5份、姜粉1.2份、安赛蜜0.25份、白砂糖2.4份、麦芽糖3.5份、食盐1.2份、香精0.25份、山药7.5份、枸杞2.4份、丁香2.5份、甘草1.5份、杜仲3.6份、五味子2.4份、植物油3.5份。
其中,香精由草莓香精、苹果香精按重量比为1:1组成;
植物油为菜籽油、葵花籽油按重量比为1:2组成的混合物;
改性马铃薯淀粉按照以下工艺进行制备:改性马铃薯淀粉按照以下工艺进行制备:按重量份将120份马铃薯淀粉与300份乙醇水溶液混合后充分搅拌,调节体系pH值为7.5,然后进行超声处理,超声功率为160W,超声频率为22KHz,超声时间为12min,过滤,干燥,粉碎,与3份醋酸酐、8份N,N-亚甲基双丙烯酰胺、0.6份海藻酸钠、1份黄原胶、0.4份壳聚糖、0.3份苯甲酸、4份蔗糖酯、160份去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。
实施例5
本发明提出的一种营养保健薯条,其原料按重量份包括:其原料按重量份包括:改性马铃薯淀粉140份、大米粉35份、蛋粉22份、藕粉8.5份、姜粉1.8份、安赛蜜0.4份、白砂糖3.5份、麦芽糖4.5份、食盐1.8份、香精0.35份、山药10份、枸杞3份、丁香4.5份、甘草1份、杜仲5份、五味子3份、植物油4.5份。
其中,香精由柠檬香精、草莓香精、苹果香精按重量比为1:1:1组成;
植物油为花生油、大豆油、葵花籽油按重量比为2:1:1组成的混合物;
改性马铃薯淀粉按照以下工艺进行制备:改性马铃薯淀粉按照以下工艺进行制备:按重量份将110份马铃薯淀粉与260份乙醇水溶液混合后充分搅拌,调节体系pH值为7,然后进行超声处理,超声功率为150W,超声频率为20KHz,超声时间为15min,过滤,干燥,粉碎,与2份醋酸酐、6份N,N-亚甲基双丙烯酰胺、0.5份海藻酸钠、0.8份黄原胶、0.3份壳聚糖、0.2份苯甲酸、3份蔗糖酯、150份去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。

1.一种营养保健薯条,其特征在于,其原料按重量份包括:改性马铃薯淀粉100-150份、大米粉20-40份、蛋粉15-25份、藕粉5-10份、姜粉1-2份、安赛蜜0.2-0.5份、白砂糖2-4份、麦芽糖3-5份、食盐1-2份、香精0.2-0.4份、山药6-12份、枸杞2-4份、丁香2-5份、甘草1-3份、杜仲3-6份、五味子2-4份、植物油3-5份。
2.根据权利要求1所述营养保健薯条,其特征在于,香精由柠檬香精、薄荷香精、草莓香精、苹果香精中的一种或两种以上组成。
3.根据权利要求1所述营养保健薯条,其特征在于,植物油为花生油、大豆油、菜籽油、葵花籽油中的一种或两种以上组成的混合物。
4.根据权利要求1所述营养保健薯条,其特征在于,改性马铃薯淀粉按照以下工艺进行制备:将马铃薯淀粉与乙醇水溶液混合后充分搅拌,调节体系pH值,然后进行超声处理,过滤,干燥,粉碎,与醋酸酐、N,N-亚甲基双丙烯酰胺、海藻酸钠、黄原胶、壳聚糖、苯甲酸、蔗糖酯、去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。
5.根据权利要求4所述营养保健薯条,其特征在于,改性马铃薯淀粉按照以下工艺进行制备:按重量份将80-120份马铃薯淀粉与220-300份乙醇水溶液混合后充分搅拌,调节体系pH值为6.5-7.5,然后进行超声处理,过滤,干燥,粉碎,与1-3份醋酸酐、4-8份N,N-亚甲基双丙烯酰胺、0.4-0.6份海藻酸钠、0.6-1份黄原胶、0.2-0.4份壳聚糖、0.1-0.3份苯甲酸、2-4份蔗糖酯、130-160份去离子水混合,搅拌反应,干燥,粉碎,得到改性马铃薯淀粉。
6.根据权利要求4或5所述营养保健薯条,其特征在于,超声处理的工艺参数如下:超声功率为120-160W,超声频率为16-22KHz,超声时间为12-18min。
