Abstract

La presente se relaciona con un polvo soluble para bebidas de café el cual, cuando se agrega agua, es capaz de formar una bebida de café que tiene unasuperficie superior espumada. El polvo de bebida de café soluble comprende una matriz soluble que co ntiene gas y que comprende solidos de café solubles y unmaterial de relleno soluble, el material de relleno soluble constituye cuando por lo menos aproximadamente 35% en peso de la materia seca de la matriz y siendoefectivo para incrementar el volume n de polvo de bebida de café soluble mediante la incorporacion de un gas. Se ha encontrado que un material de rellenoparticularmente preferido es oligofructosa, que tiene buena solubilidad, y la cual influye positivamente en el sabor de la bebida de café que se prepare. Lapresente también se relaciona con un polvo de bebida de café soluble que proporciona café espumado negro. Además la presente proporciona un proceso parapreparar tal polvo de bebida de café soluble.
