Abstract
Patente de Invenção: "BEBIDA SOLúVEL EM Pó AUTO-ESPUMANTE". A invenção refere-se a um pó para bebida de café solúvel o qual, quando da adição de água, é capaz de formar uma bebida de café tendo uma superfície superior espumante. O pó para bebida de café solúvel compreende uma matriz solúvel contendo gás compreendendo sólidos de café solúvel e um enchedor solúvel, o enchedor solúvel constituindo pelo menos cerca de 35% em peso da matéria seca da matriz e sendo efetivo para aumentar o volume do pó para bebida de café solúvel incorporando gás. Verificou-se que um enchedor particularmente preferido é oligofrutose, que possui boa solubilidade e a qual influencia positivamente o sabor da bebida de café preparada. A invenção também refere-se a um pó para bebida de café solúvel que proporciona um café preto espumante. Além disso, a invenção proporciona um processo para o preparo de tal pó para bebida de café solúvel.
