Abstract
A találmány kávéaromát tartalmazó oldódó krémporokra és italporokra,valamint a krémporok előállítására alkalmas eljárásra vonatkozik. Atalálmány szerinti oldódó zamatosított krémporok fehérjéket, zsírokatés szénhidrátokat tartalmazó beágyazóanyagot, valamint olyanaromaelegyet foglalnak magukban, amely vizes kávéaroma-komponensekbőlés azok stabilizálásához elegendő mennyiségű, kávéból származó, oldódószilárd anyagokból áll. A találmány szerinti oldódó italporokkörülbelül 10-30 tömeg%-ban kávéból származó, oldódó szilárd anyagokatés körülbelül 70-90 tömeg%-ban krémport tartalmaznak. Az oldódózamatosított krémporokat úgy állítják elő, hogy - kifagyasztássalösszegyűjtenek kávéaroma-komponenseket; - a vizes kávéaroma-komponenseket elválasztják a szerves kávéaroma-komponensektől; -kávéból származó, oldódó szilárd anyagoknak a vizes kávéaroma-komponensekhez való hozzáadásával vizes aromaoldatot állítanak elő; -a vizes aromaoldatnak a fehérjéket, zsírokat és szénhidrátokattartalmazó krémkoncentrátumhoz való hozzáadásával zamatosított oldatotkészítenek és - a zamatosított oldatból szárítással port állítanakelő.
