Abstract
Se revela un proceso para la produccion de materiales de fermentacion que comprende formar una pasta agregando agua al gluten seco en una cantidad de 19 a60% en peso de agua basado en el peso de la pasta, peletizar la pasta y, si es necesario,agrega r agua para ajustar el contenido de humedad entre 35 y 60% porpeso basado en el peso de los gránulos formados antes de la esterilizacion de los gránulos mediante el tratamiento de vapor. También se propone un producto dekoji realizadomediante la fab ricacion de koji utilizando uno o más de los materiales de fermentacion obtenidos, así como los condimentos que los contienen.
