Abstract
Description
麺、米飯等の澱粉含有食品は、加工・調理の際、食品表面に澱粉質が流出し、食品同士が結着してしまう。その結果、麺製品であれば、麺同士の付着により、一食分に小分けしたり、喫食時に汁やソースと混ぜたりすることが困難になる。即席麺の場合は、麺が結着した部分が湯戻りしにくくなる。また、米飯製品の場合、チャーハンで全体が均一に炒められない、おにぎりの成型機で飯粒がつぶれてしまうということが起こる。こういった問題は、生産効率の低下、コストアップを招き、さらに、できあがった食品も喫食事に食べ辛く、美味しくないという結果を招く。
この食品同士の結着性をなくし、ほぐれ性を改善する従来の技術としては水溶性ヘミセルロースの利用があり、具体的には、穀粉、澱粉、ゲル化能を有する天然多糖類のいずれか一つ以上を主体とする食品であって、アラビアガム、プルランまたは水溶性大豆多糖類のいずれか一つ以上を主剤とする溶液によりコーティングしたことを特徴とする食品(特許文献1)、油脂と、増粘多糖類と、水溶性へミセルロースとを含む混合物を乳化して得られるほぐれ改良剤(特許文献2)などがある。
このように、難溶性の水溶性ヘミセルロース粉体を効率良く水に溶解させるためには、従来減圧下で撹拌する方法や、水温を上昇させるか溶解時に加温する方法、あるいは遠心脱泡型の溶解機を使用する方法等があるが、何れも相応の設備を要する。
また、泡立ちや溶解性を改善するため水溶性大豆多糖類を造粒する技術もあるが(特許文献3)、さらに改善する余地がある。
以上の如く、水溶性ヘミセルロースが持つ機能、特性を発揮するためには、水溶性ヘミセルロースを水に溶解ないし分散させることが必須であるが、水溶性ヘミセルロースの粉体は、水への溶解性、泡立ちの抑制は必ずしも十分といえずさらに改善する余地があることから、現状では作業性の面で必ずしも全てが満足されてはいない。
本発明は溶解時の泡立ちを抑制し、かつ、穀類加工食品のほぐれ性を良好にするほぐれ剤を提供することを目的とする。
(1)蛋白質を含有する水溶性大豆多糖類を含む溶液をプロテアーゼ処理し、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下である水溶性大豆多糖類を製造し、該水溶性大豆多糖類の粉体と、次の(A)及び(B)を原料として使用し、造粒する、作業性に優れた穀類加工食品用ほぐれ剤の製造方法、
(A)リン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物、
(B)トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂、
(2)(A)において、リン脂質含有組成物が、リン脂質を固形分当たり0.1~45重量%含む、(1)記載の作業性に優れた穀類加工食品用ほぐれ剤の製造方法、
(3)水溶性大豆多糖類の添加量がほぐれ剤中、固形分当たり20~99.6重量%、リン脂質含有組成物の添加量がほぐれ剤中、リン脂質含量として固形分当たり0.002~1.0重量%、食用油脂の添加量がほぐれ剤中、固形分当たり0.1~10重量%である、(1)記載の作業性に優れた穀類加工食品用ほぐれ剤の製造方法。

本発明のほぐれ剤は以下のようにして製造する。
蛋白質を含有する水溶性大豆多糖類を含む溶液をプロテアーゼ処理し、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下である水溶性大豆多糖類を調製し、該水溶性大豆多糖類に、次の(A)及び(B)を原料として使用し、造粒することにより製造できる。
(A)リン脂質をアセトン不溶物として固形分あたり0.1~50重量%含むリン脂質含有組成物。
(B)トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂。
本発明のほぐれ改良剤は、溶解時の泡立ちが抑制され、麺や米飯などの穀類加工食品のほぐれ性を良好にすることができる。
本発明において、リン脂質含有組成物は、リン脂質を固形分当たり0.1~50重量%含む。好ましくは固形分当たり1.0~45重量%、より好ましくは固形分あたり2.0~40重量%であり、さらに好ましくは固形分当たり3.0~40重量%である。
本発明において、リン脂質含量は、比色法で測定した値である。すなわち、モリブデンブルー吸光光度法を用いてリンを比色定量し、これをステアロオレオレシチンとして計算したリン脂質の百分率で表したものである。
本発明において、リン脂質含有組成物とは、リン脂質そのものや、該リン脂質を含む素材も含む。リン脂質含有組成物としては、動物性由来もしくは植物性由来のものが挙げられる。本発明で使用されるリン脂質含有組成物の由来としては、動物性由来では卵黄、牛脂等のものが挙げられ、植物性由来では大豆、ひまわり、綿実、米、コーン、サフラワー、オリーブ、パーム、ヤシ、なたね等のものが挙げられ、特定のリン脂質組成物に限られるものではない。
リン脂質を含む素材としては、植物性由来のものとしては、例えば、大豆乳化組成物、オーツ麦乳化組成物、ヒマワリ油脂組成物等が挙げられる。大豆乳化組成物の具体例としては、不二製油製の「濃久里夢」が挙げられる。また、動物性由来のものとしては、例えば、卵黄油等が挙げられる。
リン脂質含有組成物の本ほぐれ剤中の含有量は、リン脂質含量として固形分当たり0.002~1.0重量%が好ましく、より好ましくは0.003~1.0重量%であり、さらに好ましくは0.003~0.9重量%であり、さらに好ましくは0.003~0.8重量%である。
本発明において、食用油脂はトリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸であることが必要である。トリグリセリドの構成脂肪酸中、炭素数6~10の脂肪酸は、好ましくは50~100重量%、より好ましくは75~100重量%である。
トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂としては、例えば、MCTが挙げられる。
食用油脂の本ほぐれ剤中の含有量は固形分当たり0.1~10重量%が好ましく、0.4~9重量%が好ましい。
本発明のゲル濾過で分析したときの全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下である水溶性大豆多糖類を使用することで、ほぐれ剤を製造する際、溶解時の起泡を抑制することができる。ゲル濾過で分析したときの全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合は、好ましくは28%以下である。
本発明においてゲル濾過の分析条件は以下の通りである。
ゲルろ過クロマトグラフィー条件は特に限定しないが、例えば、以下の方法によって分子量分布を測定することができる。ゲルろ過クロマトグラフィーは、好ましくはHPLCを用いる。典型的な測定条件を以下に示すが、以下に示す条件と同程度の精度及び正確性で分子量分布を測定できる条件を採用することもできる。
○測定条件
カラム: 東ソー(株)製のHPLCカラムTSK gel G3000PWXL(φ7.2mm×30cm)及びTSK gel G2000PWXL(φ7.2mm×30cm)を連結使用
溶離液:1%SDS 1.17%NaCl 50mMリン酸バッファー(pH7.0)
検体試料: 溶離液中1重量%となるよう溶解させ、0.45μmフィルターでろ過後カラムに供する。
カラム温度:40℃
流速: 0.4ml/min
検出: 波長220nm
分子量マーカー:Thyroglobulin、γ-globulin、Albumin、Peroxidase、Myoglobin、Cytchrome C、Insulin、還元型Glutathione、p-アミノ安息香酸を用いる。
本発明の水溶性大豆多糖類は、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下にすればよく、水溶性大豆多糖類の製造工程でプロテアーゼを作用させたものをそのまま用いても良いし、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下にできる範囲で、水溶性大豆多糖類の製造工程でプロテアーゼを作用させたものに、プロテアーゼを作用させていない水溶性大豆多糖類を混合して得ることもできる。
水溶性大豆多糖類の大豆由来の原料として、豆腐や分離大豆蛋白などを生産する場合に副産物として生じるオカラや脱脂大豆等を利用することができる。
原料としてオカラを用いる場合は、分離大豆蛋白を製造する工程で副産物として生じるオカラを使用することが好ましい。オカラや脱脂大豆等の原料はそれぞれ、単独で用いることができるし、併用して使用することができる。
水溶性大豆多糖類の製造法の好ましい一例を示すと以下の通りである。オカラ等の原料を塩酸等の酸を用いて好ましくは、pH3~7、より好ましくはpH4を超え6.5以下で、好ましくは80℃以上130℃以下、より好ましくは100℃を超え、130℃以下で、概ね30~240分間、好ましくは60~210分間の条件にて加熱分解し、スラリーを得る。
スラリーは遠心分離等で固液分離して水溶性大豆多糖類を含む溶液を得る。該水溶性大豆多糖類中には蛋白質が概ね、0.1~13重量%程度含まれている。この蛋白質を含有する水溶性大豆多糖類を含む溶液をプロテアーゼ処理して、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合を30%以下にし、そのまま乾燥するか、例えば活性炭処理或いは樹脂吸着処理或いはエタノール沈澱処理して疎水性物質あるいは低分子物質を除去し乾燥することによって、水溶性大豆多糖類を得ることができる。水溶性大豆多糖類の製造工程で、必要に応じVTIS等の加熱殺菌をすることができる。
蛋白質を分解する酵素には、蛋白分解酵素であるプロテアーゼ、ペプチダーゼ等が使用でき、具体的にはペプシン、トリプシン、パパイン、ズブチリシン、ブロメライン等エンド型、エキソ型の何れを使用することも可能でそれぞれの単独使用、或いは併用の何れでも良い。例として、FoodProAlkalineProtease(ダニスコジャパン株式会社製)、アルカラーゼ(ノボザイムズ社製)、プロテアーゼP「アマノ」3G(天野エンザイム株式会社製)などを用いることができる。従って、蛋白質を分解するには、これらの酵素を用い、各々の至適条件(温度、pH、時間)で実施すればよい。
酵素反応時のpHは、好ましくはpH6~10、より好ましくはpH7~9であり、反応温度は、好ましくは30~80℃、より好ましくは40~70℃であり、反応時間は好ましくは10~120分間、より好ましくは20~90分間である。
本発明のほぐれ改良剤は、上記ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下の水溶性大豆多糖類と、次の(A)及び(B)を原料として使用し、造粒することにより製造できる。
(A)リン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物。
(B)トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂。
造粒方法としては、流動層造粒法、流動層多機能型造粒法、噴霧乾燥造粒法、転動造粒法、撹拌型造粒法等の水溶性大豆多糖類の粉体にバインダー液を噴霧して、粉体にバインダー液成分を被覆できる方法が挙げられる。なかでもバインダー液を噴霧して造粒する流動層造粒法が好ましく利用できる。流動層造粒機としては例えば、フロイント産業製の「フローコーター」が例示できる。
造粒時の粉体原料として、本発明に用いる水溶性大豆多糖類の他、デキストリン等の賦形剤を使用することができる。賦形剤を使用する場合の配合量は特に制限されないが、好ましくは、本発明に用いる水溶性大豆多糖類:賦形剤=5:95~95:5の範囲であり、より好ましくは、10:90~90:10であり、さらに好ましくは20:80~80:20である。
(1)水などの溶媒にリン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物、トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂を含む原料を溶解或いは懸濁させたバインダー液を水溶性大豆多糖類に噴霧して造粒する方法、(2)水などの溶媒にリン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物含む原料を溶解或いは懸濁させたバインダー液を、水溶性大豆多糖類とトリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂を混合したものに噴霧して造粒する方法、(3)水などの溶媒にリトリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂を含む原料を溶解或いは懸濁させたバインダー液を、水溶性大豆多糖類とリン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物を混合したものに噴霧して造粒する方法、(4)水などの溶媒を、水溶性大豆多糖類、リン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物及びトリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂を混合したものに噴霧して造粒する方法、などが挙げられる。
この中でも、(1)水などの溶媒にリン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物、トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂を含む原料を溶解或いは懸濁させたバインダー液を水溶性大豆多糖類に噴霧して造粒する方法、が好ましい。
ほぐれ剤中の(a)の水溶性大豆多糖類の配合量は、固形分当たり20~99.6重量%が好ましく、より好ましくは40~99.5重量%である。また、ほぐれ剤中の(b)のリン脂質含有組成物の配合量はリン脂質含量として好ましくは固形分当たり0.002~1.0重量%となる配合量であり、より好ましくは0.003~1.0重量%となる配合量である。また、ほぐれ剤中の(c)の食用油脂の配合量は、固形分当たり0.1~10重量%が好ましく、0.4~9重量%が好ましい。
穀類加工食品としては、穀類食品(米、小麦、大麦、稗、粟等)を1次加工又は更
に2次加工した食品のことをいう。1次加工食品としては米飯、麦飯、粟餅、乾麺、生麺、パスタ等があり、2次加工食品としては1次加工食品を再調理した食品、例えば、おにぎり、寿司、ピラフ、チャーハン、炊き込みご飯、混ぜご飯、そば、うどん、中華麺、パスタ、素麺、即席麺等がある。
本ほぐれ剤の穀類加工食品への添加量は穀類加工食品の種類や配合によっても異なるが、小麦粉等の粉重量に対して、好ましくは0.1~5重量%、より好ましくは0.5~3重量%が例示される。
本ほぐれ改良剤を穀類加工食品に添加する方法、又は本ほぐれ改良剤で穀類加工食品に表面処理する方法は特に限定されないが、次のような方法がある。本ほぐれ改良剤を穀類加工食品に添加する方法として、(1)加工米飯を作る場合、米に本ほぐれ改良剤を添加して炊飯する。また、その米飯を更に加工する。(2)麺又はパスタを茹でる際の水又は熱湯に予め本ほぐれ剤を添加して茹でる、等の方法が例示できる。
また、本ほぐれ剤で穀類加工食品を表面処理する方法として、(1)炊飯、蒸煮後の米飯や茹で上がった麺又はパスタに本ほぐれ剤の水溶液を絡ませて表面処理する。(2)蒸煮後の米飯や茹で上がった麺又はパスタに本ほぐれ剤の水溶液を噴霧する。(3)予め調味液に本ほぐれ剤を溶解しておき、パスタ、麺又は米飯にまぶして表面処理する。(4)本ほぐれ剤を粉末調味料と混合し、米飯、パスタ、麺にまぶして表面処理する。等の方法が例示できる。これらの方法は製造ライン、販売形態等の個々の食品特性により選択される。
分離大豆蛋白の製造工程で得られるオカラを原料とし、固形分6%となるように加水し、塩酸を用いてpHを6に調整し、120℃、90分間加熱抽出した。抽出後の抽出液のpHは5であった。その後、遠心分離(8000rom, 30分間)により蛋白質を含有する水溶性大豆多糖類を含む溶液を得た。
該水溶性大豆多糖類を含む溶液のpHを、水酸化ナトリウムを用いてpH8に調整し、プロテアーゼ(FoodProAlkalineProtease、ダニスコジャパン株式会社製)を該水溶性大豆多糖類を含む溶液の固形分に対し、0.1%添加し、反応温度を50℃、30分間反応させることで酵素処理液を得た。酵素処理液を電気透析により脱塩処理し、その後に凍結乾燥して水溶性大豆多糖類を得た。
この水溶性大豆多糖類のゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合を測定したところ、16.7%であった。
表2、表3に示す配合に従い、製造例1で得られた水溶性大豆多糖類に、バインダー液を噴霧して流動層造粒(フローコーターFLO-5型、フロイント産業(株))により、吸気温度は70℃、バインダー液のスプレー噴霧圧力は3.0kg/cm2で造粒し、ほぐれ剤を得た。
なお、リン脂質を固形分あたり0.1~50%含むリン脂質含有組成物として、大豆乳化組成物(不二製油株式会社製、商品名:濃久里夢、固形分=19%、リン脂質含量=製品溶液中0.78%、固形分当たり4.1%)、卵黄油(卵黄レシチン PL-30S、キユーピー株式会社製、リン脂質含量=固形分あたり38%)を用いた。また、トリグリセリドの構成脂肪酸の33~100%が、炭素数6~10の中鎖脂肪酸である食用油脂として、MCT(MCT-64C、不二製油株式会社製、炭素数6~10の中鎖脂肪酸がトリグリセリドの構成脂肪酸の100%)を用いた。
また、ソヤファイブ-S-LA200、パーム分別油は不二製油株式会社製のものを用いた。また、賦形剤として、デキストリン(松谷化学工業株式会社性、商品名:TK-16)を用いた。
各実施例、比較例で得られたほぐれ剤について、以下に示す、「泡立ち評価方法」に基づき、水への溶解時の泡立ちについて評価を行った。実施例1~9の評価結果を表2、比較例1~10の評価結果を表3に示した。
1.200mlのビーカーにイオン交換水95g、各ほぐれ剤5gを入れる。
2.オクタゴン回転子 38mm×φ8mmにて1500rpmで10分間撹拌直後の泡立ちの様子で評価する。
(評価)
×:溶液全体がほぼ泡になる。
△:溶液と泡の嵩が同程度。
○:ほぼ泡立たない。
評価が○の場合、合格と判断した。
各ほぐれ剤について、穀類加工食品として麺を用いてほぐれ性評価を行った。
まず、準強力粉600g、そば粉400g、食塩10g、水350gを配合し、ミキサーで15分間混捏し、常法に従って圧延、切り出し(切り歯#22角、麺線厚み1.3mm)を行って得られた麺を沸騰水中で2分間茹で上げ、流水で30秒間水洗し、茹で麺を得た。次に、各ほぐれ剤について10%水溶液を作成し、茹で麺200gあたり10g均一に噴霧し、容器に充填、密封し、1日間冷蔵保存後のほぐれ性をパネラー10名で評価した。各パネラーは表1の基準に基づき1~5点で評価し、その平均点をほぐれ性評価とした。平均点が4.0点以上であれば、ほぐれ性が良好と判断した。
実施例1~9の評価結果を表2に、比較例1~10の評価結果を表3に示した。
製造例1で得られた水溶性大豆多糖類に、ソヤファイブ-S-LA200を混合して、分子量3000~15000の画分の含有量を57.7%、47.4%、37.2%、26.9%、16.7%の水溶性大豆多糖類を得た。
表4に示す配合に従い、各水溶性大豆多糖類に、バインダー液を噴霧して流動層造粒(フローコーターFLO-5型、フロイント産業(株))により、吸気温度は70℃、バインダー液のスプレー噴霧圧力は3.0kg/cm2で造粒し、ほぐれ剤を得た。
これらのほぐれ剤について、実施例1と同様に評価した。結果を表4に示した。
Claims (14)
- 蛋白質を含有する水溶性大豆多糖類を含む溶液をプロテアーゼ処理し、ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下である水溶性大豆多糖類を製造し、該水溶性大豆多糖類の粉体と、次の(A)及び(B)を原料として使用し、造粒する、作業性に優れた穀類加工食品用ほぐれ剤の製造方法。
(A)リン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物。
(B)トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂。 - (A)において、リン脂質含有組成物が、リン脂質を固形分当たり0.1~45重量%含む、請求項1記載の作業性に優れた穀類加工食品用ほぐれ剤の製造方法。
- 水溶性大豆多糖類の添加量がほぐれ剤中、固形分当たり20~99.6重量%、リン脂質含有組成物の添加量がほぐれ剤中、リン脂質含量として固形分当たり0.002~1.0重量%、食用油脂の添加量がほぐれ剤中、固形分当たり0.1~10重量%である、請求項1記載の作業性に優れた穀類加工食品用ほぐれ剤の製造方法。
- 水溶性大豆多糖類の添加量がほぐれ剤中、固形分当たり20~99.6重量%、リン脂質含有組成物の添加量がほぐれ剤中、リン脂質含量として固形分当たり0.002~1.0重量%、食用油脂の添加量がほぐれ剤中、固形分当たり0.1~10重量%である、請求項2記載の作業性に優れた穀類加工食品用ほぐれ剤の製造方法。
- 請求項1記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品の製造方法。
- 請求項2記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品の製造方法。
- 請求項3記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品の製造方法。
- 請求項4記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品の製造方法。
- 請求項1記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品のほぐれ改良方法。
- 請求項2記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品のほぐれ改良方法。
- 請求項3記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品のほぐれ改良方法。
- 請求項4記載の製造方法により製造されたほぐれ剤を、穀類加工食品に添加する、穀類加工食品のほぐれ改良方法。
- 次の(a)~(c)を含む造粒物からなる作業性に優れた穀類加工食品用ほぐれ剤。
(a)ゲル濾過で分析したときの波長220nmで検出された全体のピーク面積に対する、分子量3000~15000の画分のピーク面積の割合が30%以下である水溶性大豆多糖類。
(b)リン脂質を固形分当たり0.1~50重量%含むリン脂質含有組成物。
(c)トリグリセリドの構成脂肪酸の33~100重量%が、炭素数6~10の中鎖脂肪酸である食用油脂。 - (a)の水溶性大豆多糖類のほぐれ剤中の配合量が、固形分当たり20~99.6重量%であり、(b)のリン脂質含有組成物のほぐれ剤中の配合量が、リン脂質含量として固形分当たり0.002~1.0重量%であり、(c)の食用油脂のほぐれ剤中の配合量が、固形分当たり0.1~10重量%である、請求項13記載の作業性に優れた穀類加工食品用ほぐれ剤。
