Abstract
Description
本願は、2013年3月29日に、日本に出願された特願2013-073149号に基づき優先権を主張し、その内容をここに援用する。
プロセスチーズの原料として用いられるナチュラルチーズ中のカゼインの質と量が、プロセスチーズの硬さに寄与することが知られている。プロセスチーズの硬さを向上させるために、原料として、未分解のカゼイン(インタクトカゼインともいう)が多く含まれるナチュラルチーズが使用される。
プロセスチーズに硬さを付与するためのナチュラルチーズとしては、硬さの付与の観点からは、カゼインの分解が進んでいない方が好ましいため、熟成工程を行わずに製造されたナチュラルチーズが好適である。
特許文献1の実施例1に具体的に記載されている方法は、まず、カゼインミセル濃度が所定の値に調整された濃縮乳の温度を20℃とし、レンネットを添加して10分間反応させた後、さらに乳酸を添加してpH5.5に調整する。これを80℃の温湯に注ぎ込みカードを生成させ、生成したカードを混練しながら脱水し、水分45~50重量%のカードを得る。得られたカードに溶融塩を添加し、90℃に到達させるように加熱乳化して乳化物を得、前記乳化物を5℃で一昼夜冷却してモチ状のプロセスチーズを得る方法が開示されている。
カゼインの分解を抑えるために熟成工程を行わずに製造されたナチュラルチーズは、プロセスチーズの製造に用いるまでの保存を、酵素、微生物などの作用によるカゼインの分解が進行しにくい環境で行うことが好ましい。
そのための方法として、例えば、ナチュラルチーズの水分含有量を低くすることにより酵素活性を低下させる方法、ナチュラルチーズの塩分濃度を高くすることによって水分活性を低下させ、その結果、微生物の発育や酵素活性を低下させる方法、保存温度を通常の冷蔵温度よりも低く(例えば、0~-2℃の温度範囲が例示される)して微生物の発育や酵素活性を低下させる方法、またはこれらを組み合わせる方法を用いることができる。
具体的には、加熱乳化工程において加熱溶融されたときの粘度(以下、溶融粘度という)が、前記ナチュラルチーズの保存期間が長くなるにしたがって低下し、ナチュラルチーズの溶融粘度が低下すると、得られるプロセスチーズの硬さも低下するという問題がある。
下記酸性化工程、凝固工程、および脱水工程を経てナチュラルチーズ(N)を製造して、得られたナチュラルチーズ(N)を前記原料用チーズの総質量の少なくとも5質量%として用いて前記加熱乳化工程を行うことを特徴とし、
前記酸性化工程が、乳を酸性化してpHが5.8~6.4である酸性化乳を得る工程であって、前記乳に、前記酸性化乳のpHとなるように酸成分を加える工程であり、前記凝固工程が、前記酸性化乳に、乳酸菌スターターを添加せず、凝乳酵素を添加し凝固させて、カードを得る工程であり、前記脱水工程が、前記カードからホエイを排出してナチュラルチーズ(N)を得る工程であって、前記カードを55℃以上に加熱して凝乳酵素を失活させる酵素失活工程を含む工程である、プロセスチーズの製造方法である。
前記脱水工程における加熱が間接加熱法で行われることが好ましい。
前記凝乳酵素の失活温度が55~65℃であることが好ましい。
前記酸成分が、クエン酸、乳酸、酢酸からなる群から選ばれる1種以上の有機酸の水溶液であることが好ましい。
前記脱水工程で得られるナチュラルチーズ(N)の25℃におけるpHが5.6~6.4であることが好ましい。
前記脱水工程で得られたナチュラルチーズ(N)を10℃以下で10~180日間保存した後に前記加熱乳化工程に用いることが好ましい。
前記カードを55℃以上に加熱して凝乳酵素を失活させる酵素失活工程が、前記カードを1分間あたりの昇温速度が1℃以下で加温しながら55℃以上に加熱して凝乳酵素を失活させる酵素失活工程であることが好ましい。
すなわち、本発明は以下の側面を有する。
(1)1種以上のナチュラルチーズを含有する原料用チーズに溶融塩を加えて加熱乳化する加熱乳化工程を有するプロセスチーズの製造方法であって、
下記酸性化工程、凝固工程、および脱水工程を経てナチュラルチーズ(N)を製造して、
得られたナチュラルチーズ(N)を前記原料用チーズの少なくとも5質量%として用いて前記加熱乳化工程を行うことを特徴とし、
前記酸性化工程が、乳を酸性化してpHが5.8~6.4である酸性化乳を得る工程であって、前記乳に、前記酸性化乳のpHとなるように酸成分を加える工程であり、
前記凝固工程が、前記酸性化乳に、乳酸菌スターターを添加せず、凝乳酵素を添加し凝固させて、カードを得る工程であり、
前記脱水工程が、前記カードからホエイを排出してナチュラルチーズ(N)を得る工程であって、前記カードを1分間あたりの昇温速度が1℃以下で加温しながら55℃以上に加熱して凝乳酵素を失活させる酵素失活工程を含む工程である、プロセスチーズの製造方法;
(2)前記脱水工程において、得られるナチュラルチーズ(N)の水分含有量が、ナチュラルチーズ(N)の総質量に対し、35~40質量%となるようにホエイを排出する、(1)に記載のプロセスチーズの製造方法;
(3)前記脱水工程における加熱が間接加熱である、(1)または(2)に記載のプロセスチーズの製造方法;
(4)前記凝乳酵素の失活温度が55~65℃である、(1)~(3)のいずれか一項に記載のプロセスチーズの製造方法;
(5)前記酸成分が、クエン酸、乳酸および酢酸からなる群から選ばれる1種以上の有機酸の水溶液である、(1)~(4)のいずれか一項に記載のプロセスチーズの製造方法;
(6)前記脱水工程で得られるナチュラルチーズ(N)の25℃におけるpHが5.6~6.4である、(1)~(5)のいずれか一項に記載のプロセスチーズの製造方法;および
(7)前記脱水工程で得られたナチュラルチーズ(N)を10℃以下で10~180日間保存した後に加熱乳化することを含む、(1)~(6)のいずれか一項に記載のプロセスチーズの製造方法。
また本発明によれば、乳酸菌スターターを使用せずにナチュラルチーズを製造できるため、カードを形成した後に加熱殺菌する工程を設けなくても、バクテリオファージによる感染のリスクを回避できる。
プロセスチーズは、乳等省令(「乳及び乳製品の成分規格等に関する省令」、昭和26年12月27日厚生省令第52号)において以下のように定められている。
すなわち、プロセスチーズとは1種以上のナチュラルチーズを用いて食品衛生法で認められている添加物を添加するか又は添加せず粉砕し、混合し、加熱溶融し、乳化してつくられるもので乳固形分が40質量%以上のものをいう。乳固形分が40質量%未満のものはチーズフードに分類される。
また公正競争規約(景品表示法第11条に基づく協定又は規約)において、プロセスチーズは、乳固形分(乳脂肪と乳蛋白質の総量)を40質量%以上含み、ナチュラルチーズ以外の添加成分として、脂肪量調整のためのクリーム、バター、バターオイルを含有することができる。水を含んでもよい。その他の添加成分として、味、香り、栄養成分、機能性および物性を付与する目的の食品を、製品の固形分重量の1/6以内で含有することができる。前記その他の添加成分として前記クリーム、バター、バターオイル以外の乳等を添加する場合は、製品中における乳糖含量が5質量%を超えない範囲、かつ、製品の固形分重量の1/6以内と定められている。
本明細書における「プロセスチーズ」は、前記乳等省令および公正競争規約の規定を満たすことが好ましい。すなわち、本明細書における「プロセスチーズ」とは、1種以上のナチュラルチーズに、食品添加物として許容され得る添加物を添加するか、または添加せず粉砕し、混合し、加熱溶融し、乳化して製造され、プロセスチーズの総質量に対する乳固形分が40質量%以上であり、水を含んでいてもよく、さらに前記ナチュラルチーズ以外の添加成分として、脂肪量調整のためのクリーム、バターまたはバターオイルを含んでいてもよく、味、香り、栄養成分、機能性および物性を付与する目的の食品をプロセスチーズの固形分の総質量に対して、1/6以内含んでいてもよいが、プロセスチーズにおける乳糖含量は、プロセスチーズの総質量に対して5質量%を超えない範囲、かつ、プロセスチーズの固形分の総質量に対して1/6以内であることが好ましい。
前記クリーム、バターおよびバターオイルの定義は、前記乳等省令に従う。
本明細書における「ナチュラルチーズ」とは、前記乳等省令で定義されたナチュラルチーズを意味する。
本発明のプロセスチーズの製造方法では、特定の製造方法で製造したナチュラルチーズを用いることを特徴とする。かかる特定の製造方法で製造したナチュラルチーズを、本明細書では、便宜的に「ナチュラルチーズ(N)」と表記する。
本発明のプロセスチーズの製造方法は、原料用チーズ原料の少なくとも一部として、特定の製造方法で製造したナチュラルチーズ(N)を用いる方法である。
ナチュラルチーズ(N)を製造する方法は概略、チーズ用原料に酸成分を添加し、凝乳酵素を添加し、得られたカードからホエイを排出してナチュラルチーズ(N)を得る方法である。
まずナチュラルチーズ(N)を製造する工程について説明する。
ナチュラルチーズ(N)の製造に用いるチーズ用原料としては、チーズの原料として公知の動物一般の乳またはそれを濃縮した濃縮乳を用いることができる。必要に応じて均質化処理されたものでもよい。
乳は、乳等省令(「乳及び乳製品の成分規格等に関する省令」、昭和26年12月27日厚生省令第52号)によって定義されるところの、乳(生乳、牛乳、特別牛乳、生やぎ乳、生めん羊乳、殺菌やぎ乳、部分脱脂乳、脱脂乳、加工乳等)が好ましいが、そのほかに水牛の乳、ラクダの乳など、チーズの原料として公知の動物一般の乳を用いることができる。
牛乳を使用する場合、一般的には成分調整をしていない全乳を使用するが、風味の改良や使用目的に応じて脂肪分等の成分調整を行ったものをチーズ用原料としてもよい。例えば、セパレーター等により脂肪分離するか、または、分離クリームを加えることなどによって脂肪率を調整した乳を使用してもよい。
本発明では、チーズ用原料として乳を用いることが好ましく、特に従来品のチーズと置換することを目的とした場合、組成の点で生乳、部分脱脂乳等が好ましい。
ナチュラルチーズ(N)の製造に用いる凝乳酵素としては、動物(牛、ヤギ、ヒツジ等)由来のレンネット、微生物由来のレンネット、植物由来のレンネット、遺伝子組み換えレンネットなどが挙げられ、チーズの製造において使用される市販品のレンネットを用いることができる。レンネットは通常、酸性領域に至適pHを持つ。
本発明においては、微生物由来のレンネット、または牛由来のレンネットであって、後述する本発明の製造方法における脱水工程で、使用したレンネットの酵素活性が十分に失活されれば、いずれのレンネットも利用できる。比較的低い加熱温度で失活される点で、酵素失活温度が55~65℃であるレンネットを使用することが好ましい。
微生物由来または牛由来であって酵素失活温度が55~65℃であるレンネットとして、例えばフロマーゼXL(Fromase XLG、製品名、DSM社製、)、Hannilase XL(製品名、クリスチャンハンセン社製)、Naturen Standard Plus(製品名、クリスチャンハンセン社製)等が挙げられる。
本発明では、ナチュラルチーズ(N)の製造に用いるチーズ用原料に酸成分を添加して、所定のpHに調整する。
酸成分としては、チーズの製造時に添加される公知の酸成分を適宜用いることができる。
例えば、クエン酸、乳酸および酢酸からなる群から選ばれる1種以上の有機酸の水溶液が好ましい。特に、添加量が比較的少量で済むという点でクエン酸水溶液が好ましい。
前記有機酸の水溶液の濃度としては、前記有機酸の水溶液の総質量に対し、前記有機酸が5~60質量%、より好ましくは10~50質量%が好ましい。
[酸性化工程]
まず、乳由来のチーズ用の原料を酸性化してpHが5.8~6.4である酸性化乳を得る。
本発明では、チーズ用原料の酸性化は、チーズ用原料に酸成分を加えることによって行う。本発明では、乳酸菌スタータは添加しない。すなわち、チーズ用原料に、得ようとする酸性化乳のpHとなる量の酸成分を加える。なお、牛の生乳のpHは、通常6.5~6.7である。
酸性化乳のpHの値によって、得られるナチュラルチーズ(N)が加熱溶融されたときの溶融粘度(以下、ナチュラルチーズ(N)の溶融粘度という。)が変化する。
本発明において、酸性化乳のpHを5.8~6.4とすることによって、ナチュラルチーズ(N)の良好な溶融粘度が得られ、かつナチュラルチーズ(N)の保存期間が長くなることによるナチュラルチーズ(N)の溶融粘度の低下が良好に抑えられやすい。前記酸性化乳のpHは、好ましくは5.8~6.4であり、6.0~6.2がより好ましい。
本発明における酸性化工程の1つの側面は、有機酸の水溶液の総質量に対し、5~60質量%、より好ましくは10~50質量%の有機酸の水溶液、より好ましくはクエン酸の水溶液を、チーズ用原料のpHが5.8~6.4、より好ましくは6.0~6.2になるようにチーズ用原料に添加する工程である。
チーズ用原料の加熱殺菌を行う場合、加熱殺菌を終えたチーズ用原料の温度を、後述の脱水工程における加熱温度より低い温度に冷却し、一定温度に保持した状態で、酸成分の添加を行うことが好ましい。本発明の1つの側面は、加熱殺菌を終えたチーズ用原料を、例えば35~50℃程度に冷却し、前記温度範囲で保持しながら前記酸成分を添加することにより、酸性化乳を得ることである。
チーズ用原料中のカルシウム含有量によって、凝乳酵素による凝固速度が影響を受ける。
例えばチーズ用原料(殺菌乳)の体積に対して、塩化カルシウム含有量は0.005~0.2体積%が好ましく、0.01~0.1体積%がより好ましい。
酸性化工程で得られた酸性化乳に、凝乳酵素を添加し、チーズ用原料を凝固させて、カードを得る。好ましくは加熱殺菌され塩化カルシウムが添加され、一定温度に保持された酸性化乳に、凝乳酵素を添加し凝固させて、カードを得る。
本発明の1つの側面は、酸性化乳に凝乳酵素を添加し、撹拌して均一に分散させた後、温度を保ちながら静置してカードを形成することである。
凝乳酵素の添加量は、少なすぎると凝固するまでの時間を要し、効率が悪くなり、多すぎると不均一な凝固や急速な凝固により品質の低下を招くおそれがある。したがって、凝乳酵素の添加量は、これらの不都合が生じないように設定することが好ましい。
前記凝乳酵素の添加量としては、酸性化乳の全体積に対し、5~600ppm、より好ましくは10~500ppm)が好ましい。
凝乳酵素を添加した後、静置する時間は、酸性化乳が充分に凝固する時間であればよい。例えば15~60分間程度が好ましく、20~40分間がより好ましい。
凝乳酵素を添加した後、静置するときの温度は、例えば30~50℃が好ましく、35~45℃がより好ましい。
凝固工程で得られたカードとホエイの混合物からホエイを排出してナチュラルチーズ(N)を得る。
本発明において、脱水工程は、凝固工程で得られたカードとホエイの混合物からホエイを排出することを含み、ホエイの排出それ自体は、公知の手法を適宜用いて行うことができる。本発明では、「脱水」と「ホエイの排出」を同義で用いることがある。例えばカードの細切(カッティング)、撹拌(ステアリング)、加熱(クッキング)および温度保持(ホールディング)、ホエイ排出、堆積、切断(ミリング)、加塩、撹拌および堆積(メローイング)、型詰めおよび圧搾(プレス)等の公知の手法を施しホエイの排出を行うことにより、カードとホエイの混合物からホエイを除去し、カードの総質量に対する水分含有量が35~40質量%のナチュラルチーズ(N)を得ることができる。
本発明の1つの側面は、前記凝固工程で得られたカードとホエイの混合物から、カードの総質量に対する水分含有量が35~40質量%になるようにホエイを排出することである。
本発明の1つの側面は、前記脱水工程において、少なくともカードを55℃以上、好ましくは55~65℃に加熱し、前記温度に保持して凝乳酵素を失活させる工程を行うことである。また、本発明の別の側面は、前記脱水工程において、少なくともカードを、1分間あたりの昇温速度が1℃以下で加温しながら、55℃以上、好ましくは55~65℃に加熱し、前記温度に保持して凝乳酵素を失活させる工程を行うことである。
例えば、凝固工程で得られたカードを細切(カッティング)し、好ましくは撹拌(ステアリング)しながら、55℃以上、好ましくは55~65℃に加熱(クッキング)し、さらに撹拌しながら前記温度に10~80分間程度維持(ホールディング)する。この工程は凝乳酵素の失活とカードとホエイの混合物からのホエイの排出を兼ねる。加熱温度が55℃以上であると、凝乳酵素が失活して、ナチュラルチーズ(N)の溶融粘度の低下が良好に抑えられる。前記加熱温度が65℃以下であると、加熱によるカードの結着や延伸が生じにくい。なお、本脱水工程において65℃より高い温度で加熱および保持を行っても、凝乳酵素を失活させた後に速やかに65℃以下に冷却することによって、必要以上の加熱によるカードの結着や延伸が生じることを抑制することができる。
本明細書において、「凝乳酵素の失活」とは、凝乳酵素が変性し、凝乳酵素としての機能を失うことを意味する。
すなわち、酸性化乳を40℃以上に昇温する際には、1分間当りの昇温速度が0.3℃以上1℃以下であることが好ましく、0.4℃以上0.7℃以下であることがより好ましい。脱水工程における昇温速度が1℃/分より速い場合、カード表面からの脱水(ホエイの排出)が急速に促進される結果、カード表面のみが硬くなり、カード内部からの脱水がおこりにくくなる。そのため、カード中の水分の分布が不均一となり、脱水工程における脱水(ホエイの排出)も不十分となる。その結果、カード形成は軟弱になり、溶融時の粘度が低下する。
本明細書において、「間接加熱」または「間接加熱法」とは、熱媒が、加熱対象に直接接触しないようにして熱媒の熱を加熱対象に伝導させ熱交換する加熱方法を意味し、例えば、タンク等の反応容器のジャケットに温湯を循環させて、反応容器内の加熱対象に温湯の熱を熱交換して行われる。
前記温湯の温度は、加熱対象の目的の温度および昇温速度によって適宜調整できるが、60~95℃、より好ましくは65~90℃を例示することができる。
前記水分含有量が35質量%以上であると脱水工程が過度に長くならず、40質量%以下であると、プロセスチーズを製造する際の水分調整が過度に制限されず好ましい。
本明細書において、ナチュラルチーズの水分含有量は国際酪農連盟(International Dairy Federation;IDF)において定められているチーズの乳固形分定量法のための国際標準法における混砂乾燥法(102℃で恒温になるまで加熱する)を用いて得られる水分含量値である。
次に、ナチュラルチーズ(N)を用いてプロセスチーズを製造する工程を説明する。
本発明のプロセスチーズの製造方法は、1種以上のナチュラルチーズを含有する原料用チーズに溶融塩を加えて加熱乳化する加熱乳化工程を有する。
前記原料用チーズは、ナチュラルチーズ(N)に、所望により、ナチュラルチーズ(N)以外のナチュラルチーズを添加して混合し、原料用チーズ中においてナチュラルチーズ(N)の占める割合が、原料用チーズの総質量に対し、少なくとも5質量%となるようにして調製することができる。
プロセスチーズの製造に用いる原料用チーズとして、ナチュラルチーズ(N)に加えて、ナチュラルチーズ(N)以外のナチュラルチーズを用いることができる。前記ナチュラルチーズは、乳等省令において定められる「ナチュラルチーズ」であり、プロセスチーズの製造において公知のナチュラルチーズを適宜用いることができる。
本発明におけるナチュラルチーズ(N)は、プロセスチーズの硬さを向上させる効果に優れ、ナチュラルチーズ(N)以外のナチュラルチーズとして軟質チーズや、比較的高熟度で組織が弱いチーズを用いてプロセスチーズを製造する場合に好適に用いられる。
プロセスチーズの製造に用いられる溶融塩は、チーズの分野において公知の溶融塩を適宜使用できる。溶融塩は1種を用いてもよく、2種以上を併用してもよい。
溶融塩の具体例としては、モノリン酸塩(オルトリン酸ナトリウム等)、ジリン酸塩(ピロリン酸ナトリウム等)、ポリリン酸塩(ポリリン酸ナトリウム等)等のリン酸塩;クエン酸塩(クエン酸ナトリウム、クエン酸カリウム等);等が挙げられる。
溶融塩の添加量は、ナチュラルチーズ(原料用チーズ)と溶融塩の合計質量に対して0.1~10質量%であり、0.5~3質量%が好ましい。上記範囲の下限値以上であると、乳化不良が生じにくい。上限値以下であると、保存中に溶融塩の結晶が析出しにくく、かかる結晶の析出による風味不良が生じにくい。
プロセスチーズの製造時の「その他の成分」としては、プロセスチーズの成分として許容され得る成分を意味し、例えば、食品添加物として許容され得る添加物、すなわち、プロセスチーズにおいて公知の保存料、調味料、増粘安定剤、ゲル化剤、溶融塩以外の乳化剤、pH調整剤、または香料等;脂肪量調整のためのクリーム、バターまたはバターオイル等;副材料(具材)、すなわち、味、香り、栄養成分、機能性および物性を付与する目的の食品として、肉類(例えば、サラミ等の食肉加工品)、魚介類(例えば水産加工品)、野菜、アーモンド等の植物の種子などの食品を粉砕した食品粉砕物;七味唐辛子や粉山葵等の粉末食品;明太子等のペースト状食品;ソースやシロップ等の液状食品;前記クリーム、バター、バターオイル以外の乳等を、本発明の効果を損なわない範囲で用いてもよい。
これらは一種あるいは複数種、適宜選択して使用することができる。
プロセスチーズの全原料は、ナチュラルチーズ(N)に、溶融塩と、所望により、ナチュラルチーズ(N)以外のナチュラルチーズ、水、またはその他のプロセスチーズの成分として許容され得る成分を添加して混合することにより調製することができる。ここで、前記プロセスチーズの全原料において、前記ナチュラルチーズ(N)の含有量は、前記ナチュラルチーズ(N)および所望により添加されたナチュラルチーズ(N)以外のナチュラルチーズからなる原料用チーズの総質量に対し、少なくとも5質量%である。
本発明のプロセスチーズ類の製造方法は、原料用チーズに溶融塩を加えて加熱乳化する加熱乳化工程を有する。
原料用チーズは、1種以上のナチュラルチーズを含有し、少なくとも上記の方法で製造されたナチュラルチーズ(N)を含む。原料用チーズはナチュラルチーズ(N)のみであってもよく、ナチュラルチーズ(N)以外の他のナチュラルチーズの1種以上を併用してもよい。
原料用チーズ中においてナチュラルチーズ(N)の占める割合は、原料用チーズの総質量に対し、少なくとも5質量%であり、10質量%以上が好ましく、20質量%がより好ましい。100質量%でもよいが、風味の良いプロセスチーズが得られやすい点からは50質量%以下が好ましい。すなわち、原料用チーズの総質量に対するナチュラルチーズ(N)の占める割合は、5質量%以上100質量%以下が好ましく、10質量%以上100質量%以下がより好ましく、20質量%以上100質量%以下がより好ましく、5質量%以上50質量%以下がさらに好ましく、20質量%以上50質量%以下が特に好ましい。
前記プロセスチーズの全原料中において、前記原料用チーズの含有量は、前記プロセスチーズの全原料の総質量に対し、20質量%95以上質量%以下が好ましく、50質量%以上90質量%以下がより好ましく、60質量%以上80質量%以下がさらに好ましい。
本発明の別の側面において、プロセスチーズの製造方法は、ナチュラルチーズ(N)に、溶融塩と、所望により、ナチュラルチーズ(N)以外のナチュラルチーズを添加して混合し、加熱して乳化する加熱乳化工程を含む。
本発明のまた別の側面において、プロセスチーズの製造方法は、ナチュラルチーズ(N)に、溶融塩と、所望により、ナチュラルチーズ(N)以外のナチュラルチーズ、水、またはその他のプロセスチーズの成分として許容され得る成分を添加して混合し、プロセスチーズの全原料を調製する工程、および前記プロセスチーズの全原料を加熱して乳化する加熱乳化工程を含む。
具体的には、加熱乳化工程では、前記全原料を乳化機に投入して加熱乳化する。加熱乳化は、全原料を撹拌しながら、加熱処理を行う工程であり殺菌工程も兼ねている。加熱処理は、好ましくは直接または間接蒸気を用いて行われる。乳化機は、例えば、ケトル型、2軸スクリューをもつクッカー型、サーモシリンダー型等の乳化機を用いることができる。
加熱温度は70℃以上が好ましく、80~90℃がより好ましい。
前記加熱温度の範囲で、3秒~1200秒間、より好ましくは5秒~900秒間保持することにより、全原料の加熱殺菌条件を満たすことができる。
加熱乳化工程で得られた加熱乳化物を、常法により成形し、冷却することによりプロセスチーズが得られる。
したがって、従来は保存中のカゼイン分解を抑制するために、ナチュラルチーズ(N)の水分含有量を低くして酵素活性を低下させる方法、ナチュラルチーズ(N)の塩分濃度を高くして水分活性を低下させる方法、保存温度を通常の冷蔵温度よりも低く(例えば0~-2℃)して微生物の発育や酵素活性を低下させる方法等を用いていたが、これらの方法を用いなくてもナチュラルチーズ(N)の保存中のカゼイン分解を良好に抑制でき、溶融粘度の低下が良好に抑えられる。
さらに乳酸菌スターターを使用せずにナチュラルチーズを製造するため、バクテリオファージによる感染のリスクを回避できる。
本発明の製造方法で製造されるプロセスチーズの硬さは、例えば、0.1~60N以下であることが好ましく、0.1~40N以下であることがより好ましい。
本明細書において、前記プロセスチーズの硬さは、測定機器としてレオメーターを用いて、常法により測定することができる。具体的には、厚み2.0mmに調製したプロセスチーズを、5℃で3時間保持した測定用サンプルに、レオメーター(CREEP METER RE2-33005S、山電社製)を用いて、直径8.0mmの円形プランジャーを10mm/sの貫入速度で貫入させた際の最大荷重を硬さとして測定することができる。
(1)乳にpHが5.8~6.4となるように酸成分を加え、乳を酸性化してpHが5.8~6.4である酸性化乳を得る酸性化工程;
前記酸性化乳に、乳酸菌スターターを添加せず、凝乳酵素を添加し、乳を凝固させてカードを得る凝固工程;
前記カードおよびホエイの混合物からホエイを排出しながら、前記カードを1分間あたりの昇温速度が1℃以下で加温しながら55℃以上に加熱して凝乳酵素を失活させ、ナチュラルチーズ(N)を得る脱水工程;
原料用チーズの総質量に対し、少なくとも5質量%の前記ナチュラルチーズ(N)を含む原料用チーズを調製する工程;および
前記原料用チーズに溶融塩を加えて加熱乳化する加熱乳化工程を含む、プロセスチーズの製造方法。
(2)乳にpHが5.8~6.4となるように酸成分を加え、乳を酸性化してpHが5.8~6.4である酸性化乳を得る酸性化工程;
前記酸性化乳に、乳酸菌スターターを添加せず、凝乳酵素を添加し、乳を凝固させてカードを得る凝固工程;
前記カードおよびホエイの混合物からホエイを排出しながら、前記カードを1分間あたりの昇温速度が1℃以下で加温しながら55℃以上に加熱して凝乳酵素を失活させ、ナチュラルチーズ(N)を得る脱水工程;
ナチュラルチーズ(N)に、溶融塩と、所望により、ナチュラルチーズ(N)以外のナチュラルチーズ、水、またはその他のプロセスチーズの成分として許容され得る成分を添加して混合し、プロセスチーズの全原料を調製する工程;および
前記プロセスチーズの全原料を加熱乳化する加熱乳化工程を含み、
ここで、前記プロセスチーズの全原料において、前記ナチュラルチーズ(N)の含有量が、前記ナチュラルチーズ(N)および所望により添加されたナチュラルチーズ(N)以外のナチュラルチーズからなる原料用チーズの総質量に対し、少なくとも5質量%である、プロセスチーズの製造方法。
<例1~例4>
まず、牛の生乳(25℃においてpH6.7)を、72℃で15秒間保持する条件で加熱殺菌して殺菌乳を得、40℃に温度調整した。次いで、40℃の殺菌乳に、pHが表1に示す値となるように、濃度10質量%のクエン酸水溶液を添加し、撹拌して酸性化乳を得た。
前記クエン酸水溶液を添加してから10分間経過した後、酸性化乳(40℃)に、レンネット水溶液(DSM社製、製品名:Fromase XLG、力価:750IMCU/mL)を、酸性化乳中におけるレンネットの濃度(体積基準)が25ppmとなるように添加し、均一に分散させた。
レンネットが添加されるときの酸性化乳の温度とpHを表1に示す。
得られたナチュラルチーズ(N)を5℃のインキュベーター内に保存した。
全原料の組成は、ナチュラルチーズ(N)77質量%、水21質量%、および溶融塩であるクエン酸三ナトリウム2質量%とした。溶融乳化機は、粘度測定手段を備えた乳化機(New Port社製、製品名:Rapid Visco Analyzer)を用いた。
90℃に達してから12分後に加熱を停止し、冷蔵庫内で5℃まで冷却してプロセスチーズを得た。
図1は表1に示す粘度の測定結果をグラフで表したもので、横軸はナチュラルチーズを5℃のインキュベーター内に保存した保存期間(単位:箇月)を示す。
例1において、40℃の殺菌乳に、pHが5.6となるように、濃度10質量%のクエン酸水溶液を添加し、撹拌して酸性化乳を得た。前記酸性化乳に、例1と同様にして塩化カルシウムを添加した後、レンネット水溶液を添加し40℃に保ちながら静置して凝固させたところ、凝固が軟弱であり、ホエイの白濁が著しいものであった。そのため、この後の操作を行わなかった。
本例では、対照例1として、乳酸菌スターターを用いる従来の方法でナチュラルチーズを製造した。
まず、牛の生乳(25℃においてpH6.7)を72℃で15秒間保持する条件で加熱殺菌して殺菌乳を得、32℃に温度調整した。
得られた殺菌乳(32℃)に、塩化カルシウムを、殺菌乳中における濃度(体積基準)が60ppmとなるように添加し、撹拌した。
レンネットが添加されるときの酸性化乳の温度とpHを表1に示す。
得られたナチュラルチーズ(N)を5℃のインキュベーター内に保存した。
例1と同様に、加熱溶融工程において、90℃に達してから12分後の粘度を測定した。測定結果を表1および図1に示す。
一方、本発明の方法でナチュラルチーズを製造した例1~4は、保存期間が長くなることによる、ナチュラルチーズの溶融粘度の低下が、対照例1に比べて小さく、物性の経時安定性に優れる。例えば、製造後間もない1箇月保存後では対照例とほぼ同等の溶融粘度であった例4において、3箇月保存後の溶融粘度は3448mPa・sであり、同期間保存後の対照例1の溶融粘度2429mPa・sと比較して約1.4倍となり、差が生じた。さらに、6箇月保存後では、例4の溶融粘度は2834mPa・sとなり、同期間保存後の対照例1の溶融粘度1741mPa・sと比較して約1.6倍まで差が拡大した。また、3箇月保存後の例1~3の溶融粘度は、同期間保存後の対照例の溶融粘度と比較して、それぞれ約1.2倍、約1.8倍、約2.3倍であった。さらに、6箇月保存後の例1~3溶融粘度では、同期間保存後の対照例と比較して、それぞれ約2.0倍、約2.2倍、約1.8倍であった。
例11では例2と同様にしてナチュラルチーズ(N)を製造した。
例12では例11において、脱水工程における加熱温度を50℃に変更したほかは例11と同様にしてナチュラルチーズ(N)を製造した。
すなわち、例12においては、レンネット水溶液を添加してから30分後のカード(40℃)を細切した後、撹拌しながら40分間かけて50℃に昇温した。さらに撹拌しながら40分間、50℃に保持した。
例1と同様にして、各例で得られたナチュラルチーズを5℃の冷蔵庫内で1、3または6箇月間保存したものを用いてそれぞれプロセスチーズを製造した。
例1と同様に、加熱溶融工程において、90℃に達してから12分後の粘度を測定した。測定結果を表2および図2に示す。
また図2には前記対照例1の結果も合わせて示す。
これに対して、脱水工程においてカードを50℃に加熱した例12は、ナチュラルチーズが1箇月保存された段階の溶融粘度は1700mPa・sで、同期間保存後の対照例1の溶融粘度3670mPa・sの約0.46倍とかなり低くなっており、それ以上保存期間が長くなってもナチュラルチーズの溶融粘度はあまり変わらない。保存開始後1箇月の間に、カゼインの分解が急速に進んだと考えられる。なお、例11と例2とは互いに同じ条件でナチュラルチーズ(N)を製造したものであるが、得られたナチュラルチーズ(N)の水分含有量に差がある。この差は、用いた生乳が異なることや、カッティング・堆積による製造誤差の範囲内である。
本例では、対照例2として、チーズカードを直接加熱法で加熱する、先行特許文献3の実施例1に開示された方法に準じてナチュラルチーズを製造した。まず、牛の生乳(25℃においてpH6.7)を、72℃で15秒間保持する条件で加熱殺菌して殺菌乳を得、40℃に温度調整した。次いで、40℃の殺菌乳に、pHが6.2になるように、濃度50質量%の酢酸水溶液を添加し、撹拌して酸性化乳を得た。
なお、本願発明に係る例1~4でナチュラルチーズ(N)を製造した際に、圧搾により排出されたソルトホエイは、モールドに型詰めしたカードの約8質量%であった。
例1~4で得られたナチュラルチーズ(N)を5℃の冷蔵庫内に3箇月間保存したものを用いてそれぞれプロセスチーズを製造した。
ナチュラルチーズ(N)以外のナチュラルチーズとして、比較的高熟度で組織が弱いオセアニア産チェダーチーズを用いた。
全原料の組成は、全原料の総質量に対して、ナチュラルチーズ(N)30質量%、オセアニア産チェダーチーズ50質量%、水17質量%、および溶融塩であるクエン酸三ナトリウム3質量%とした。なお、原料用チーズに占めるナチュラルチーズ(N)は、37.5質量%であった。溶融乳化機は、ケトル型溶融釜を用いた。
まず、溶融乳化機にナチュラルチーズ(N)およびオセアニア産チェダーチーズを粉砕したものを投入した。ここに水、および溶融塩を投入し、撹拌しながら、3分間で50℃から80℃になる昇温速度で加熱し、さらに80℃に1分間保持して加熱を停止し、直ちにカルトンに包装し、5℃の冷蔵庫内で冷却してプロセスチーズを得た。
Claims (7)
- 1種以上のナチュラルチーズを含有する原料用チーズに溶融塩を加えて加熱乳化する加熱乳化工程を有するプロセスチーズの製造方法であって、
下記酸性化工程、凝固工程、および脱水工程を経てナチュラルチーズ(N)を製造して、
得られたナチュラルチーズ(N)を前記原料用チーズの少なくとも5質量%として用いて前記加熱乳化工程を行うことを特徴とし、
前記酸性化工程が、乳を酸性化してpHが5.8~6.4である酸性化乳を得る工程であって、前記乳に、前記酸性化乳のpHとなるように酸成分を加える工程であり、
前記凝固工程が、前記酸性化乳に、乳酸菌スターターを添加せず、凝乳酵素を添加し凝固させて、カードを得る工程であり、
前記脱水工程が、前記カードからホエイを排出してナチュラルチーズ(N)を得る工程であって、前記カードを1分間あたりの昇温速度が1℃以下で加温しながら55℃以上に加熱して凝乳酵素を失活させる酵素失活工程を含む工程である、プロセスチーズの製造方法。 - 前記脱水工程において、得られるナチュラルチーズ(N)の水分含有量が、ナチュラルチーズ(N)の総質量に対し、35~40質量%となるようにホエイを排出する、請求項1に記載のプロセスチーズの製造方法。
- 前記脱水工程における加熱が間接加熱である、請求項1または2に記載のプロセスチーズの製造方法。
- 前記凝乳酵素の失活温度が55~65℃である、請求項1~3のいずれか一項に記載のプロセスチーズの製造方法。
- 前記酸成分が、クエン酸、乳酸および酢酸からなる群から選ばれる1種以上の有機酸の水溶液である、請求項1~4のいずれか一項に記載のプロセスチーズの製造方法。
- 前記脱水工程で得られるナチュラルチーズ(N)の25℃におけるpHが5.6~6.4である、請求項1~5のいずれか一項に記載のプロセスチーズの製造方法。
- 前記脱水工程で得られたナチュラルチーズ(N)を10℃以下で10~180日間保存した後に加熱乳化することを含む、請求項1~6のいずれか一項に記載のプロセスチーズの製造方法。
