次いで、品温を90℃に保持しながら原料を溶解させ、残りの原料(キャノーラ油以外)を投入し、さらに5分間撹拌し、品温が20℃になるまで冷却した。次いで、これに少量ずつキャノーラ油を投入しながら、卓上ホモミキサーで6500rpm、10分の条件で乳化を行い、コールスロードレッシングを製造した。
また、以下、表中の「%」は「質量%」を示す。
製造した各ドレッシングについて、下記の指標に基づき、評価を行った。
10mLサイズの遠沈管に各ドレッシングを10mL入れ、遠心分離機で40×g(半径15cm、500rpm)の遠心力で8時間遠心分離を行った後、ドレッシングの外観を目視で観察して評価した。評価基準は下記の通りである。
○:離水及び分離が認められない
△:軽微な離水及び/又は分離が認められるが、ドレッシングとして使用できる
×:離水及び/又は分離が明確に認められる
100mLサイズのビーカーに各ドレッシングを50mL入れ、4℃で7日間、静置保存した後に、各ドレッシングの流動性を目視で観察して評価した。評価基準は下記の通りである。
○:流動性があり、セットが認められない
△:流動性が低いが、セットは認められない
×:流動性がなく、セットが認められる
各ドレッシングを、24時間、20℃の温度で保温し、BM型粘度計を使用して粘度を測定した。なお、ローターNo.3を使用して12rpmで回転させ、5回転時の値を粘度とした。評価基準は下記の通りである。
○:粘度が1000~7000mPa・sである
×:粘度が1000mPa・s未満であるか、又は7000mPa・s超である
パネラー5名を参加させ、各ドレッシング(2ml)を口に含んだ後の風味を点数化した。点数化の基準は下記の通りである。
2点:1点のものよりもさらに味と食感の両方が良好である
1点:味と食感の両方が良好である
0点:異味がある、かつ/又は食感が悪い
◎:1.6~2
○:1~1.4
×:0.8以下
上記の各種評価に基づき、各ドレッシングについて総合的な評価を行った。評価基準は下記の通りである。
◎:離水、分離、セット、及び粘度が全て○であり、かつ、風味評価が◎である
○:離水、分離、及びセットが全て○又は△である
×:離水、分離、及びセットのいずれかが×である
表3記載の原料を使用して、上記コールスロードレッシングと同様の方法によってシーザーサラダドレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、及びキサンタンガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表3に示す。
表4記載の原料を使用して、上記コールスロードレッシングと同様の方法によってコーンドレッシングを製造した。なお、還元水飴は果糖ぶどう糖液糖とともに投入した。また、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、及びキサンタンガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表4に示す。
表5記載の原料を使用して、上記コールスロードレッシングと同様の方法によってごまドレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、キサンタンガム、及びタマリンドシードガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表5に示す。
表6記載の原料を使用して、上記コールスロードレッシングと同様の方法によってコールスロードレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、キサンタンガム、及びタマリンドシードガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。また、上記コールスロードレッシングの製造において使用した原料に加えて、アセチル化リン酸架橋デンプン(製品名;SMS747、松谷化学工業株式会社製)、ヒドロキシプロピル化リン酸架橋デンプン(製品名;パインエース#5、松谷化学工業株式会社製)、グアーガム(製品名;ビストップD-20、三栄源エフ・エフ・アイ株式会社製)を使用した。
製造した各ドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表6に示す。
表7記載の原料を使用して、上記コールスロードレッシングと同様の方法によってシーザーサラダドレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、及びキサンタンガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表7に示す。
表8記載の原料を使用して、上記コールスロードレッシングと同様の方法によってコーンドレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、及びキサンタンガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表8に示す。
表9記載の原料を使用して、上記コールスロードレッシングと同様の方法によってごまドレッシングを製造した。なお、アセチル化アジピン酸架橋デンプン、オクテニルコハク酸デンプンナトリウム、キサンタンガム、及びタマリンドシードガムについては、上記コールスロードレッシングの製造において使用した原料と同様の原料を使用した。
製造したドレッシングについて、上記コールスロードレッシングと同様の指標に基づき、評価を行った。その評価結果を表9に示す。
Claims (6)
- 架橋デンプン、オクテニルコハク酸処理デンプン、及び増粘多糖類を含有することを特徴とする乳化液状調味料。
- 乳化液状調味料の全体量に対して、0.3~2.2質量%の前記架橋デンプン、0.5~2.5質量%の前記オクテニルコハク酸処理デンプン、及び0.2~0.6質量%の前記増粘多糖類を含有することを特徴とする請求項1に記載の乳化液状調味料。
- 前記架橋デンプンが、アセチル化アジピン酸架橋デンプンであり、かつ、前記オクテニルコハク酸処理デンプンが、オクテニルコハク酸デンプンナトリウムであることを特徴とする請求項1又は2に記載の乳化液状調味料。
- 前記増粘多糖類としてキサンタンガムを含有することを特徴とする請求項1~3のいずれか1項に記載の乳化液状調味料。
- 前記増粘多糖類としてタマリンドシードガムを含有することを特徴とする請求項1~4のいずれか1項に記載の乳化液状調味料。
- 乳化液状調味料の全体量に対して1~30質量%の油脂を含有し、前記油脂は20℃で液状であることを特徴とする請求項1~5のいずれか1項に記載の乳化液状調味料。
