Abstract

 乾燥大豆を粉砕して得られた大豆粉末とデキストリンとアルカリ炭酸塩とを含む大豆混合粉末と、凝固剤との組み合わせからなる大豆凝固食品の素であって、具体的には、前記大豆混合粉末が、大豆粉末100質量部に対してデキストリンを9~40質量部の割合で、アルカリ炭酸塩を0.15~1.6質量部の割合で含むの大豆凝固食品(豆腐、豆花)の素とすること、および前記大豆混合粉末を大豆飲料の素とすること。これにより、乾燥大豆を粉砕して得られた大豆粉末を使用して家庭等で誰にでも簡単に外観、歯ざわりのよい、また、栄養価の高い豆腐や豆花、更には大豆飲料を得るための、大豆混合粉末などを提供することができる。
