Abstract
Procedeu pentru obtinerea unor foi subtiri din aluat, care au o capacitate buna în gluten, de exemplu, pentru fabricarea aluatului pentru strudel, caracterizat prin aceea ca, în scopul unei laminari bune, aluatul este deformat sub forma unei fîsii plate, printr-o laminare într-o directie, a carei grosime depaseste grosimea produsului final dorit, fiind trasa apoi transversal pe directia de laminare si mentinuta la latimea trasa pîna la uscarea ei, respectiv pîna la micsorarea continutului în apa de circa 17....20% în greutate. Instalatie, conform uneia dintre revendicarile 6....14 caracterizata prin aceea ca cureaua superioara (14) sau alta asemanatoare ruleaza pe niste arcuri (29), în timp ce cureaua inferioara (15)sau alta asemanatoare ruleaza pe rolele unui lant cu role (25).
