Class 87(ii) In order to obtain loaves of uriiform texture in which the air cells are elongated and lie with their greater axes in the plane of the cut face. the dough is sheeted between rollers j which are relatively long :r relation to the size of the doughpiece i and which elongate the dough. piece in a direction chiefly at right angles to its direction of travel, the air cells k being elongated in a like manner. The resultant sheet h is made into a coil m, which is then cut into cylindrical sections m<SP>1</SP>, the sections being laid side by side in the dough bin n with their axes at right angles to the length of the tin. The cylindrical pieces may be sheeted and rolled separately, instead of being cut from a longer roll. If the sheet of dough h is wider than required, it may be rolled and the resultant roll fed longitudinally through a pair of sheeting rollers which squeeze it out laterally as previously described. In a modified process the dough piece i is passed through a number of sheeting rollers, the surface speeds of each succeeding pair of rollers being preferably less, but at most equal to the surface speed of the preceding pair, so that there is no tendency for the rollers to elongate the dough in the direction of travel.
