Abstract

La invencion esta dirigida a un producto similar a queso crema donde proteina diferente de caseina reemplaza a la proteina caseina y un metodo para hacer tal producto. Mas especificamente, la invencion esta dirigida a un proceso que es efectivo para hacer un producto similar a queso crema sustancial- mente libre de caseina, donde el proceso comprende: mezclar (1) proteinas diferentes de caseina de leche, (2) grasa tal como grasa de mantequilla u otra grasa de grado alimenticio, y (3) agua, para formar una mezcla; someter la mezcla a una primera homogeneizacion para formar un sistema de emulsion estabilizada de matriz de proteina; calentar el sistema de emulsion estabilizada de matriz de proteina a una temperatura efectiva para desnaturalizar las proteinas para formar una emulsion estabilizada de matriz de proteina desnaturalizada; ajustar el pH de la emulsion estabilizada de matriz de proteina desnaturalizada a alrededor de 4 a alrededor de 6; someter la emulsion con pH ajustado a una segunda homogeneizacion para formar el producto similar a queso crema; y empacar el producto similar a queso crema.
