Abstract

Patente de Invenção: "PROCESSO PARA A PRODUçãO DE QUEIJO E DE PRODUTOS DE QUEIJO". A invenção refere-se a um processo rápido, simplificado que é adequado para a fabricação de uma variedade de queijo e de produtos de queijo, inclusive de queijo natural e de queijo processado, em uma instalação simples com equipamento comum. Em particular, a invenção refere-se a um processo para a fabricação de queijo, que compreende as etapas de: (a) concentrar o leite ou um leite seco reconstituído, que tem seu pH ajustado até aproximadamente 5,0 até 6,8, por ultrafiltração e diafiltração para produzir um concentrado; (b) suplementar o concentrado com um concentrado ou com um isolado de proteína e, opcionalmente gordura e/ou sabor e (c) aquecer a mistura obtida para produzir uma consistência lisa.
