Abstract
Un proceso para la fabricación de embutidos bajos en grasa, en el cual seprepara una masa de carne que consiste de carne, grasa adicional, hielo ysal curante de nitrito en proporciones tales que tiene un contenido degrasa de 1 a 20%, que consiste en picar la carne molida mientras se agregahielo, sal y fosfato, y una temperatura mantenida entre -2°C y 10°C pormedio de la adición de nitrógeno líquido hasta durante 10 minutos,cortando a una temperatura entre 12°C y 15°C, rellenar, enrojecer ycalentar.
