Abstract
La presente invención se refiere a el uso de un compuesto de acuerdo con la fórmula (I), en la forma de cualquiera de sus estereoisómeros o una mezcla de los mismos, y en donde n es un entero de 0 a 2; la línea punteada representa un enlace carbono-carbono simple o doble; y cada uno de R1 a R4, cuando se toman independientemente entre sí, representa un átomo de hidrógeno o representa un grupo R5 o OR, R5 representa un grupo alquilo de C1-C5 o incluso un grupo alquilo de C1-C3 y opcionalmente uno de los grupos R1 a R4 representa -OH; y/o cuando R1 y R2 se toman juntos, y/o R3 y R4 se toman juntos, representan un grupo OCH2O, con la condición de que los grupos tomados juntos sean sustituyentes adyacentes del grupo fenilo; como un ingrediente para conferir, mejorar, exacerbar o modificar el sabor de kokumi o umami de un artículo saborizado.
