Abstract
Se propone un proceso para secar cristales de alulosa que comprende o consiste en las siguientes etapas: (a) Proporcionar cristales de alulosa sin secar, (b) tratamiento de temperatura de los cristales de la etapa a) a una temperatura comprendida entre unos 25 y unos 70 °C en un equipo de secado, en la que el tratamiento de temperatura (b1) se lleva a cabo a presión atmosférica y con un tiempo de permanencia en el rango de unos 5 minutos a unas 5 horas, o (b2) se lleva a cabo bajo presión reducida y temperatura constante y un tiempo de permanencia en el rango de unos 30 min a 5 horas y (c) acondicionar el producto intermedio obtenido en la etapa b1) o b2), en donde (c1) el acondicionamiento se lleva a cabo durante un período de unos 30 minutos a 7 horas a una temperatura en el rango de unos 40 a unos 70°C, o (c2) el acondicionamiento se lleva a cabo durante un período de entre 15 y 90 horas con aire de una humedad relativa de entre el 30 y el 60% aproximadamente y a una temperatura entre unos 25 y unos 40 °C.
