Abstract
Un producto de jalea comestible, que es un cuerpo moldeado a partir de una masa de material de modelo de jalea por un avance progresivo de la masa a una estación de moldeo y el moldeo progresivo del cuerpo en la estación de moldeo, en donde la masa comprende un azúcar y un agente de moldeo de estructura seleccionado de un hidrocoloide y almidón modificado, en donde el contenido de sólidos del producto de jalea, cuando se moldea al cuerpo, es de por lo menos 60% en peso. Se describe un método para elaborar tal producto de jalea comestible, el cual es transparente y contiene burbujas de aire que son visibles a simple vista; y el cual puede reunirse con otros productos de jalea semejantes para moldear cuerpos consolidados, tales como trenzas, que pueden desprenderse fácilmente por los consumidores.
