Abstract
Изобретение относится к винодельческой промышленности, а именно к способу производства экстрактивного виноградного сусла.Способ, согласно изобретению, предусматривает переработку винограда с получением свежей мезги, ее сульфитацию, частичное отделение сусла-самотека, его обработку с заменой катионов солей винной кислоты сусла на катионы водорода и возврат обработанного сусла-самотека в мезгу до достижения рН 2,5…2,9, настаивание подкисленной мезги, отделение полученного экстрактивного сусла с опциональным дополнительным сульфитированием и подкислением.
