Abstract
Изобретение относится к винодельческой промышленности, а именно к способу подкисления продуктов виноделия различного назначения.Способ, согласно изобретению, включает обработку продуктов виноделия ионообменными смолами или электродиализом с замещением катионов виннокислых солей на катионы водорода. При этом продукты виноделия предварительно нагревают, а до или во время процесса обработки в них вносят с избытком и растворяют до насыщения виннокислые соли, преимущественно винный камень.
