Abstract
Изобретение относится к винодельческой промышленности, а именно к способу производства сахарного сиропа предназначенного для производства вина.Способ, согласно изобретению, предусматривает подкисление обработанного виноматериала путем обработки катионообменными смолами в H+ форме с заменой катионов солей винной кислоты вина на катионы водорода до достижения рН не более 2,5, разбавление сахара в подкисленном вине, сульфитацию и хранение полученного сахарного сиропа.
