Abstract

Invenţia se referă la industria vinicolă, şi anume la un procedeu de producere a vinului din struguri.Procedeul, conform invenţiei, include prepararea mustului din struguri, limpezirea mustului, adăugarea în mustul limpezit, în mod succesiv, cel puţin a unui tanin şi a unei lizozime, precum şi fermentarea alcoolică pentru obţinerea vinului.Utilizarea taninului şi a lizozimei conform invenţiei oferă posibilitatea de a elimina etapa de sulfitare necesară în procedeele tradiţionale şi vinul fără sulfit obţinut în acest mod manifestă o stabilitate chimică şi microbiologică bună.
