Claims (12)

  1. 하나 또는 그 이상의 피틴 분해 효소를 포함하는 효소 제제 존재하에서 침지시키는 것을 특징으로 하는 이산화 황을 함유하는 온수에 옥수수 또는 수수 낟알을 침지시키는 방법.
  2. 제1항에 있어서, 효소 제제가 옥수수에 존재하는 피틴이 본질적으로 분해되는 양의 하나 또는 그 이상의 피틴 분해 효소를 함유하는 것을 특징으로 하는 방법.
  3. 제1항 또는 제2항에 있어서, 효소 제제가 피타제 및/또는 산 포스파타제를 포함하는 것을 특징으로 하는 방법.
  4. 제1항 내지 제3항중 어느 하나에 있어서, 효소 제제에 다른 식물 물질 분해 효소가 함유된 것을 특징으로 하는 방법.
  5. 제4항에 있어서, 식물 물질 분해 효소가 셀룰라제, 헤미셀룰라제 및/또는 펙티나제 활성을 갖는 것을 특징으로 하는 방법.
  6. 제1항 내지 제5항중 어느 하나에 있어서, 피틴 분해 효소 제제를 밀 또는 아스퍼질러스 종(Aspergillusspp.)으로부터 또는 다른 식물 또는 미생물 원으로부터 얻는 것을 특징으로 하는 방법.
  7. 제1항 내지 제6항중 어느 하나에 있어서, 물의 온도가 20-60℃인 것을 특징으로 하는 방법.
  8. 제1항 내지 제7항중 어느 하나에 있어서, 옥수수 또는 수수 낟알을 12-48시간동안 침지시키는 것을 특징으로 하는 방법.
  9. 제8항에 있어서, 낟알을 12-18시간동안 침지시키는 것을 특징으로 하는 방법.
  10. 단계 a)에서 침지를 제1-9항중 어느 하나에 따라 수행하는 것을 특징으로 하는, a) 이산화황을 함유하는 온수에 옥수수 또는 수수 낟알을 침지시키고, b) 침지액을 낟알로부터 분리하여 농축시키고, c) 낟알을 거칠게 분쇄하여 배종을 분히하고 탈수시키고, d) 낟알을 미세하게 분쇄하고 섬유를 전분과 단백질로부터 분리하고 섬유 부분을 탈수시키고, e) 전분과 단백질을 각각 분리하고, 단백질 부분을 농축시키고 전분 부분을 건조 및/또는 전환시키는 연속적인 단계들로 구성된 옥수수 또는 수수의 가공방법.
  11. 제1항 내지 제10항중 어느 하나에 있어서, 침지를 4-10시간동안 첫번째 침지에 이어서 낟알을 분쇄한 후 다시 3-6시간 동안 분쇄된 낟알을 더 침지시키는 두 단계로 수행하는 것을 특징으로 하는 방법.
  12. 제11항에 있어서, 침지의 두번째 단계를 이산화황을 함유하지 않는 물에서 수행하는 것을 특징으로 하는 방법.
