Abstract
PURPOSE: To prepare the titled substance composed mainly of cellulose and hemicellulose digestible in the digestive organs, by subjecting corn fiber to enzymatic, chemical and physical treatments, thereby loosening the tissue and removing the impurities from the tissue.
CONSTITUTION: Corn fiber is subjected, e.g. to the enzymatic treatment with one or more enzymes selected from amylase, proteinase, lipase, and cellulase, at pH3W9 and 30W100°C to loosen the tissue of corn fiber and remove the impurities such as starch, proteins, etc. from the tissue. The objective substance composed mainly of cellulose and hemicellulose and useful for suppressing the increase of serum cholesterol can be obtained by the process. Said main components are solubilized during the stay in the digestive organs, and exhibit the serum cholesterol suppressing effect. Corn fiber, which is used only as cattle feed at present, can be converted to a physiologically active edible fiber by this process, demonstrating industrial advantage.
