Abstract
PURPOSE: To prepare a decomposed product of purified rice starch economically, by treating a protein-containing starch with a liquid enzyme agent so that almost all the starch is made soluble, followed by heating the starch so that coagulation of protein, fats and oils, etc. and cleavage of starch micelle occur simultaneously, treating the prepared product with liquid enzyme.
CONSTITUTION: A proper amount of water is added to a protein-containing starch (e.g., white rice bran), a small amount of a liquid enzyme agent (e.g., α-amylase pharmaceutical preparation), and the starch is treated with the agent at relatively low temperature (60W70°C). Consequently, the enzyme is penetrated into the vital organization of white rice bran, and the starch is decomposed in high ratio independently of the purity of white rice bran so that the starch is made soluble in such a degree as a DE (dextrose equivalent) 15W30 (most preferable 20±5). The treated product made soluble is heat-treated at a high temperature 110W125°C in a short time to coagulate protein, fats and oils, etc. and effect the cleavage of starch micelle. The treated product is treated with a liquid enzyme agent further, the remaining starch is completely liquefied, the solid phase is separated from the liquid phase, and the protein, etc. is removed. The treated solution is subjected to active carbon and ion exchange treatment to prepare decomposed rice starch with high purity industrially.
