Abstract
이와 같이 된 본 발명은 보이 숙차는 간편하게 휴대할 수 있도록 커피믹스형태의 1회용 포장용기로 형성하여 통상의 커피믹스와 같이 사용할 수 있으며, 커피숍과 같은 업종에서는 병 또는 비닐봉지에 포장하여 보이숙차를 음용할 수 있으며, 필요에 따라서는 식품 첨가물로 사용할 수 있도록한 인공발효 보이숙차 분말 제조방법에 관한 것이다.

Claims (4)
- 중국운남대엽종차(中國雲南大葉種茶)를 원료로 조수악퇴발효(潮水渥堆醱酵)( 생엽(生葉) - 살청(殺靑) - 유념 - 건조(乾燥) - 퇴적(堆積, 가습 20∼30%) - 1차 뒤집기 - 2차 뒤집기 - 3차 뒤집기 - 살균처리(殺菌處理) - 재건조(再乾燥) - 산차(散茶) )와 검은곰팡이(Aspergillus niger)의 미생물 푸른곰팡이(Penicill) 거미줄곰팡이(Rhizopus) 회녹색곰팡이(Aspergillus glaucus) 효모(Saccharomyces) 세균류(Bacterium))등 미생물 투입을 통해 인공발효(人工醱酵)한 보이숙차를 제조하는 단계;
상기 제조된 보이숙차를 산차(散茶)형태로 1~10배수의 정제수에 1~24시간 섭씨20~40도의 저온 불림과 숙성하는 단계;
상기 보이숙차의 찻잎을 분쇄하여 1~10배수의 정제수에 1~24시간 섭씨20~40도의 저온에서 불림과 숙성시키는 단계;
상기 불림과 숙성단계가 끝난 보이숙차와 정제수를 그대로 추출관에 넣고 섭씨 90~100도의 열탕 또는 열탕 가압추출(Pressurized Infusion)하여 추출액을 제조하는 단계;
상기 추출액을 감압분별농축(減壓分別濃縮)방법으로 진공상태에서 끊이게 되면 낮은 70℃~75℃온도에서 추출액이 증발하여 단시간에 많은 양의 수분을 증발시켜 농축 엑기스를 생산하는 농축단계;
상기 농축된 원료를 증발시켜서 보이숙차분말을 제조할 때 SD(Spray dried, 준비된 추출액을 분무 건조기에 보내어 이 건조기의 분사 노즐을 통하여 분무건조기 입구온도 약 180~200도 출구온도 약 90~100도 열풍 속에 분무하여 떨어뜨리면서 순간적으로 건조시켜 수분함량이 5% 이하인 수용성인 다공질(多孔質)의 보이숙차분말을 제조하는 SD(Spray dried)분무건조방법)분무건조 분말화를 사용하여 보이 숙차 분말을 제조하는 것을 특징으로 하는 인공발효 보이숙차 분말 제조방법. - 제1항에 있어서
상기 보이숙차 분말화 제조단계에 있어서 농축된 원료를 FD(Freeze dried) 건조방법으로 추출액을 동결시켜 감압(減壓)함으로써 얼음을 승화시켜 수분을 제거하여 건조물을 얻는 보이숙차를 분말화 하는 것을 특징으로 하는 인공발효 보이숙차 분말 제조방법. - 제1항에 있어서
보이숙차분말을 아주 작은 입자로 분쇄해 항습 장치로 보내고 증기를 뿌리면 작은 입자들이 수증기와 함께 엉켜 일정한 크기의 과립 그래뉼(Granule)타입으로 제조하는 것을 특징으로 하는 인공발효 보이숙차 분말 제조방법. - 제1항 또는 제2항에 있어서,
상기 추출액 제조단계에서 추출액을 제조하면서 발생되는 수증기 향을 보이 숙차 분말입자 형성하는 단계인 분무건조(Spray dried:SD) 단계, 또는 동결건조단계(Freeze dried:FD)에서 분무시켜 고품질의 보이 숙차 분말을 제조하는 것을 특징으로 하는 인공발효 보이숙차 분말 제조방법.
