Claims (3)
- 일정량의 담수 또는 해수를 데침용기에 넣어 80℃~100℃로 가열하고 채취된 신선한 생미역을 3초 내지 180초 동안 데치는 데침과정과, 데쳐진 미역을 5℃ 내지 10℃의 냉수로 급냉하는 급냉과정과, 상기 냉각된 미역과 염도 75%~99%인 소금을 2 대 1의 중량비로 골고루 버무려 저장용기에 넣고 5℃ 내지 15℃의 포화염수를 부어 24시간 내지 48시간 동안 교반하면서 염도가 24% 이상이 되도록 염장하는 염장과정과, 염장된 미역을 12시간 내지 48시간 동안 자연 탈수하는 자연탈수과정과, 탈수된 염장미역을 줄기와 엽체로 분리하고 혼입된 이물질과 병해엽, 어린엽체, 파쇄엽, 끝녹음을 제거하는 1차선별과정과, 선별된 미역을 세척용기에 넣어 고르게 펴고 해수여과기에 의해 여과된 5℃ 내지 15℃의 청결해수를 미역자동세척기에 공급하여 30분 내지 1시간 동안 공기(Blower)와 진동을 가하여 미역에 붙어있는 석편, 패편, 새우, 개흙 등의 협잡물을 제거하는 1차세척과정과, 1차세척 후에 미역을 2차세척용기에 넣어 5℃ 내지 15℃의 여과된 청결해수로 2차세척하고, 미역과 세척수를 자외선살균기를 이용하여 살균한 후 미역의 수분을 75% 내지 85%가 되게 탈수하는 탈수과정과, 탈수된 미역에 혼입된 패편, 목편, 새우편등의 이물질 및 협잡물, 노쇄엽, 파쇄엽, 병해엽 등을 선별하는 2차선별과정과, 2차선별된 미역에 5℃ 내지 15℃의 해양 심층수를 분무하여 미역의 수분함량을 1% ~ 3% 높이는 가수과정과, 상기 가수과정 후의 미역에 부재료를 0.1중량% 내지 5중량% 혼합하여 도포하는 부재료 도포과정과, 부재료가 도포된 미역을 직사광선이 없는 5℃ 내지 15℃의 저온에서 30분 내지 1시간 동안 숙성 시키고 일정 크기로 절단하여 수분함량이 10% 내지 15%로 건조하는 건조과정을 포함하며,상기 부재료는 갑각류, 어류, 패류, 육류, 채소류, 버섯류, 장류 중에서 적어도 하나 이상 선택되어지는 것을 특징으로 하는 건조미역 제조방법.
- 제1항에 있어서,상기 건조과정 후의 건조미역을 금속검출기를 이용하여 철편이나 녹가루등의 금속편을 탐지하여 분리하는 과정을 더 포함하는 것을 특징으로 하는 건조미역 제조방법.
- 제1항 또는 제2항의 방법으로 제조된 건조미역.
