(a)脂肪酸グリセリドでコーティングされたキャリアの粒子を含む、本明細書に記載の組成物と、
(b)粉末形態の1つ以上の酵素と、
(c)任意選択的に、1つ以上の親水コロイド、及び/又は1つ以上の生地コンディショナ、及び/又は1つ以上の抗菌剤と
を含む乾燥パン用プレミックスに関する。
a.穀物粉末、膨張剤、脂肪酸グリセリドでコーティングされたキャリアの粒子を含む、本明細書に記載の組成物、水並びに任意選択的に塩、香味剤、酸性化剤、ショートニング、全粒穀物、種子、穀粒、ドライフルーツ、親水コロイド、脂肪、砂糖、老化防止剤、柔軟化剤及び酸化防止剤から選択される1つ以上の成分から生地を混合する工程と、
b.生地を焼成する工程と
を含むプロセスに関する。
c.穀物粉末、膨張剤、本明細書に記載の焼成用プレミックス、水並びに任意選択的に塩、香味剤、酸性化剤、ショートニング、全粒穀物、穀粒、ドライフルーツ、親水コロイド、脂肪、砂糖、老化防止剤、柔軟化剤及び酸化防止剤から選択される1つ以上の成分から生地を混合する工程と、
d.生地を焼成する工程と
を含むプロセスに関する。
モノグリセリドでコーティングされたキャリアとしてオートムギ繊維を含む組成物
1.高剪断ミキサー、例えば内部チョッパーブレード又はハンマーミルを備えたリボンブレンダーにオートムギ繊維を添加する。他の好適な高剪断装置、例えばHICIPユニット又は押出成形機などが使用され得る。
2.融点を5~10℃上回る温度まで蒸留モノグリセリドを溶解させる。
3.Guardian Toco 70をモノグリセリドに添加し、完全に混合する。
4.オートムギ繊維の撹拌を始める。
5.均質になるまで混合しながら、モノグリセリド-トコフェロール混合物をオートムギ繊維上に噴霧する。
6.混合物を冷却して包装する。
モノグリセリドでコーティングされたキャリアとしてマルトデキストリンを含む組成物
モノグリセリドでコーティングされたキャリアとして二酸化ケイ素を含む組成物
上記材料を含む焼成試作を行った。試験されたパン用配合は、以下のとおりであった。
1.全ての成分を生地ミキサーに添加し、低速で2分及び中速で13分混合し、生地形成を完成させる。
2.80Fの生地温度。
3.生地を25.5オンスの小片に分けて丸める。
4.生地をシート状にして成形し、円筒物に入れて、平なべに入れる。
5.105F及び75%湿度で1時間、生地を試し焼きする。
6.200Fの内部温度まで400Fで23分間焼成する。
7.袋に入れる前に1時間冷ます。
実施例3の製品を、焼成品の軟化に使用される標準的な商業用モノグリセリドと比較する別の焼成試作を行った。Dimodan HS 150は、完全水素添加ダイズ油から製造される蒸留モノグリセリドである。図2からわかるように、実施例3の製品は、等量で使用した場合、力の差がほぼ100グラムで1日目及び3日目にはるかに柔らかいパンを製造した。
第3のパン試作では、第1の試作において使用されたものと同一の配合及びプロセスを使用した。トランス脂肪酸を含有する粉末化された分散性モノグリセリドであるDimodan PH 300と同時に、Dimodan HS 150を再び試験した。この試作では、Dimodan HS 150及びDimodan PH 300の両方は、モノグリセリドを含有しない対照と比較して同様であるか又は更に硬かった。図3からわかるように、実施例3の製品は、1日目で150グラムもより柔らかい力であり、3日目で両方の市販のモノグリセリドよりも200グラムも柔らかい力であった。他の全てのパンの属性は、同様であった。
予備結晶化モノグリセリドとブレンドした二酸化ケイ素を含む組成物
Claims (17)
- 40~60の範囲のヨウ素価の、30~100重量%のモノグリセリドを含む脂肪酸グリセリドでコーティングされたキャリア材料の粒子を含む、乾燥粉末の形態の組成物であって、前記脂肪酸グリセリドは、前記組成物の50~90重量%を構成する、パン用プレミックス用の組成物。
- 前記脂肪酸グリセリドは、45~97重量%のモノグリセリドを含む、請求項1に記載の組成物。
- 前記脂肪酸グリセリドは、植物油、又は動物油若しくは脂肪、或いはこれらの混合物に由来する、請求項1又は2に記載の組成物。
- 前記植物油は、ダイズ油、ベニバナ油、ヒマワリ油、ゴマ油、ラッカセイ油、コメヌカ油、トウモロコシ油、ババスヤシ油、キャノーラ油、菜種油、綿実油、オリーブ油、グレープカーネル油、パーム油、パームカーネル油から選択され、動物油若しくは脂肪は魚油、タロー若しくはラードから選択される、請求項3に記載の組成物。
- 前記脂肪酸グリセリドのモノグリセリド部分の脂肪酸に含まれる飽和脂肪酸は、30%~70%のパルミチン酸を含み、及び残りの飽和脂肪酸は、ステアリン酸、ミリスチン酸、アラキジン酸及び/又はベヘン酸である、請求項1~4のいずれか一項に記載の組成物。
- 前記キャリア材料は、二酸化ケイ素、ケイ酸ナトリウム、ケイ酸カルシウム、リン酸カルシウム、天然又は合成繊維、タンパク質、親水コロイド及びデンプン又はデンプン誘導体からなる群から選択される、請求項1~5のいずれか一項に記載の組成物。
- 前記繊維は、オートムギ繊維、コムギ繊維、コメ繊維、サトウキビ繊維、ビート繊維、ダイズ繊維及びセルロース繊維からなる群から選択される、請求項6に記載の組成物。
- 前記デンプンは、タピオカデンプン、トウモロコシデンプン、コムギデンプン、ジャガイモデンプン、コメデンプン及びマルトデキストリンとしてのデンプン誘導体からなる群から選択される、請求項6に記載の組成物。
- 前記キャリア材料は、100μm未満の平均粒径、500g/L未満のかさ密度及び75~500m2/gの範囲の比表面積を有する、請求項1~8のいずれか一項に記載の組成物。
- α-トコフェロール、三級ブチルヒドロキノン、没食子酸プロピル、ブチルヒドロキシトルエン、ブチルヒドロキシアニソール、アスコルビン酸、クエン酸、ローズマリー抽出物及び緑茶抽出物からなる群から選択される酸化防止剤を更に含む、請求項1~9のいずれか一項に記載の組成物。
- 乾燥パン用プレミックスであって、
(a)前記プレミックスの0.05~99.9重量%の濃度の、請求項1~10のいずれか一項に記載の組成物と、
(b)アミラーゼ、キシラナーゼ、ヘキソースオキシダーゼ、グルコースオキシダーゼ、マルトジェニックアミラーゼ、リパーゼ、ホスホリパーゼ、マルトテトラヒドロラーゼ、トランスグルタミナーゼ及びリポキシゲナーゼ並びにこれらの混合物からなる群から選択される、粉末形態の1つ以上の酵素と、
(c)任意選択的に、1つ以上の親水コロイド、及び/又は1つ以上の生地コンディショナ、及び/又は1つ以上の抗菌剤と
を含む乾燥パン用プレミックス。 - 前記生地コンディショナは、アスコルビン酸、L-システイン、アゾジカルボンアミド、ヨウ素酸カリウム及び臭素酸カリウムからなる群から選択される、請求項11に記載のパン用プレミックス。
- 前記親水コロイドは、グアーガム、カルボキシメチルセルロース、メチルセルロース、アルギン酸ナトリウム、カラギーナン、ペクチン、ヒドロキシプロピルメチルセルロース、ローカストビーンガム及びジェランガムからなる群から選択される、請求項11に記載のパン用プレミックス。
- 前記抗菌剤は、プロピオン酸カルシウム、ソルビン酸カリウム、酢及び微生物発酵物からなる群から選択される、請求項11に記載のパン用プレミックス。
- 穀物粉末、水、膨張剤及び請求項11~14のいずれか一項に記載のパン用プレミックスを含む生地。
- 請求項1~10のいずれか一項に記載の組成物を製造するプロセスであって、
(a)前記脂肪酸グリセリドを溶解させること;
(b)前記溶解された脂肪酸グリセリドを前記キャリア材料の前記粒子上に噴霧すること;
(c)冷却し、自由流動性粉末を得ること
を含むプロセス。 - 工程(b)前に前記脂肪酸グリセリドを噴霧冷却する工程を有することによって特徴付けられる、請求項16に記載のプロセス。
