実施例1において概略で説明された本方法により作られた茶濃縮物で、安定性試験が行われた。茶濃縮物は封止された容器内に残され、3か月の間一定の間隔を空けてチェックされた。実施例1で作られた茶濃縮物は、安定していることが分かった、すなわち、茶クリームは浮遊状態にあり、微生物の増殖は防止された。さらに、味試験で、濃縮物の希釈によって作られた茶の味は、試験中特に目立つ程度まで劣化することはないということが確認された。
実施例3:冷茶
実施例1は熱い茶を生成する濃縮物に焦点を当てたが、濃縮物はまた冷茶を生成するためにも使用され得ることが理解されるであろう。冷茶は、実施例1の約20:1の濃度で、冷水及び氷で単に希釈することによって、消費のために製造され得る。
実施例4:茶自動販売機
図1は、ユーザに実施例1で製造されたタイプの濃縮物を使用して作られた茶を提供することができる自動販売機2を示す。自動販売機2は、茶濃縮物6が充填されたリザーバ4を有する。リザーバ4は、濃縮物6があらかじめ充填され、空のとき新鮮な濃縮物6が補給されて販売され得る。
実施例5:さらなる茶濃縮物の生産(エアロゾル化を使用)
茶は、実施例1で記載されるように、淹れられ、濾され、粗濾過され、ならびにキサンタンガム及びアスコルビン酸が茶濾液に添加される。
実施例6:茶濃縮物のための安定性データ
エアロゾル化された茶濃縮物は、実施例5の方法に従い調製した。エアゾール容器からの茶濃縮物は、2015年7月27日にテストされ、その結果を、表1に示す。

実施例7:コーヒー濃縮物の生産(エアロゾル化を使用)
本発明によれば、コーヒーは通常の方法で、しかし通常よりもずっと濃く淹れられる。典型的には、熱水1リットル当たり約300gのコーヒーが使用される。上記茶濃縮物で考察されるように、コーヒーを淹れる時間の長さは、熱水の温度による。水出しコーヒーはまた、コーヒー粒を一晩冷水に浸出することによって作られることができ、アイスコーヒーに特に適した、より柔らかく苦みの少ない味のコーヒーができる。しかしながら、典型的には約80℃の水温が使用され、コーヒーは約10分で淹れることが可能である。
実施例8:アイスコーヒー
実施例3の冷茶と同様に、実施例7で生成された濃縮物はアイスコーヒーを製造するために使用されることができる。これは、実施例7の約15:1の濃度で、冷水及び氷と単に希釈することによって、消費のために製造され得る。
実施例9:カプチーノ濃縮物の生産(エアロゾル化を使用)
コーヒー濃縮物は、実施例7において概略で説明された方法に従い製造される。唯一の違いは、エアゾールに充填するために、窒素ガスの使用に替えて、亜酸化窒素(NO2)が8または9バールの圧力で使用されるということである。窒素ガスとは違い、亜酸化窒素は、圧力が開放されるとき、例えば濃縮物の一部が分配されるとき、コーヒーの中で溶解し泡立つ。泡立った濃縮物は、その後約15:1の比率で熱水と混合され、カプチーノタイプの飲料ができる。
実施例10:浸出液の生産(エアロゾル化を使用)
本発明によれば、浸出液はハーブ(生または乾燥)及び/または果実(一般的には乾燥)を、茶で行った方法とまったく同じ方法で、熱水に浸出させることによって、調製される。茶のように、熱水1リットル当たり約250gの果実及びハーブが使用される。
発明者は、本発明の方法及び濃縮物自体がいくつかの理由から革新的であると考える。先行技術には、茶クリームは茶濃縮物から除去されなければならないと教示する技術的偏見がある。しかしながら、発明者は、茶クリームが浮遊状態を保持されることができれば、完成品の風味の改善につながるため、このことが必ずしも必要ではないということを見出した。さらに、発明者は、濃縮物の風味を保ち、濃縮物の凍結または熱処理に頼る必要なく茶の微生物腐敗を防止し、それゆえ濃縮物が家庭での使用のため簡便に保存されることを可能とする方法を見出した。
Claims (15)
- 茶濃縮物を製造する方法であって、
植物材料及び/または植物抽出物を熱水と接触させて茶を製造するステップであって、前記熱水中の前記植物材料及び/または植物抽出物の濃度が、1リットル当たり少なくとも150グラムであるステップと、
前記茶を濾過して、茶濾液を製造するステップと、
前記茶または前記茶濾液を安定剤と接触させて、固体を浮遊状態に保持するステップと、
前記茶または前記茶濾液から、微生物学的に安定した茶濃縮物を製造するステップと、を含み、
前記植物材料及び/または植物抽出物に接触する水は、少なくとも60℃の温度であり、前記茶は少なくとも50℃の温度のときに濾過され、前記茶または前記茶濾液から、微生物学的に安定した茶濃縮物を製造するステップは、前記茶または前記茶濾液を1つ以上の保存剤に接触させることを含み、前記1つ以上の保存剤はアスコルビン酸を含み、前記茶または前記茶濾液に添加される前記アスコルビン酸の量は、茶濾液1リットル当たり0.5〜50グラムの前記アスコルビン酸を含み、前記茶または前記茶濾液のpHを4.5未満のpHまで低下させ、水で希釈されるとき、希釈された茶濃縮物のpHは4.5を超える、方法。 - 前記熱水中の前記植物材料及び/または植物抽出物の前記濃度が、1リットル当たり少なくとも200グラム、または250グラムである、請求項1に記載の方法。
- 前記茶濃縮物は、熱い茶濃縮物であって、好ましくは前記植物材料及び/または植物抽出物が、カメリアシネンシス(Camellia sinensis)の葉及び/または葉芽を含む、請求項1または請求項2に記載の方法。
- 前記植物材料及び/または植物抽出物に接触される前記熱水が、少なくとも70℃、または80℃であり、及び/または、前記茶が少なくとも60℃、70℃、80℃、または90℃である間に、前記茶が、濾過され、及び/または、前記茶を濾過する前記ステップは、前記茶を濾すこと及び前記茶を粗濾過することを含む、請求項1〜3のいずれか1項に記載の方法。
- 前記安定剤は、カッパカラギーナン、イオタカラギーナン、ラムバカラギーナン、ローカストビーンガム、オートガム、グアーガム、トラガント、アカシアガム、キサンタンガム、カラヤガム、タラガム、ジェランガム、及びガディガムからなる群から選択され、及び/または、前記茶または前記茶濾液に添加される前記安定剤の量は、茶濾液1リットル当たり0.1〜10グラムの安定剤を含む、請求項1〜4のいずれか1項に記載の方法。
- 前記茶または前記茶濾液から微生物学的に安定した茶濃縮物を生成するステップは、前記茶または前記茶濾液をエアゾール容器に充填することと、ヘッドスペース中の酸素を、好ましくは窒素または窒素酸化物である不活性ガスと置換することと、前記エアゾール容器を封止することと、をさらに含み、好ましくは、前記エアゾール容器を充填する前記ステップの前に、前記茶もしくは前記茶濾液を低温殺菌すること、または前記茶もしくは前記茶濾液を前記エアゾール容器に熱間充填し、より好ましくは、前記茶または前記茶濾液を前記エアゾール容器へ移す直前に、前記茶または前記茶濾液の温度が、少なくとも72℃、75℃、または少なくとも80℃となるように、前記茶または前記茶濾液の前記温度を上げることを含む、請求項1〜5のいずれか1項に記載の方法。
- 前記ヘッドスペース中の酸素を不活性ガスと置換する前記ステップは、前記ヘッドスペースに真空を適用することと、その後前記ヘッドスペースに前記不活性ガスを注入することとを含み、好ましくは、前記不活性ガスは、少なくとも3バール、少なくとも4バール、または少なくとも5バールの圧力で注入される、請求項6に記載の方法。
- 前記1つ以上の保存剤は砂糖を含まない、請求項1〜7のいずれか1項に記載の方法。
- 前記1つ以上の保存剤は抗微生物剤をさらに含み、前記抗微生物剤は抗真菌剤及び抗細菌剤を含み、好ましくは、前記抗真菌剤はソルビン酸塩を含み、前記ソルビン酸塩はソルビン酸、ソルビン酸ナトリウム、ソルビン酸カリウム、及びソルビン酸カルシウムからなる群から選択され、前記抗細菌剤はベンゾエートを含み、前記ベンゾエートは安息香酸、安息香酸ナトリウム、安息香酸カリウム、安息香酸カルシウム、エチルパラベン、パラヒドロキシ安息香酸エチルナトリウム、プロピルパラベン、パラヒドロキシ安息香酸プロピルナトリウム、メチルパラベン、またはパラオキシ安息香酸メチルナトリウムからなる群から選択され、及び/または、前記茶または前記茶濾液に添加される前記抗微生物剤の量は、茶濾液1リットル当たり100〜3000ミリグラムの抗微生物剤を含む、請求項1〜8のいずれか1項に記載の方法。
- 茶を製造する方法であって、前記方法は請求項1〜9のいずれか1項に記載の、前記茶濃縮物を製造するステップを有し、その後、消費前に前記茶濃縮物を熱水で希釈して、茶を製造し、前記茶中の水対茶濃縮物の比率は、少なくとも20:1である、方法。
- 請求項1〜9のいずれか1項に記載の方法によって、得られるか、または得ることが可能な茶濃縮物。
- 茶を製造するための自動販売機において、請求項11に記載の茶濃縮物を使用する方法。
- 自動販売機から茶を分配する方法であって、自動販売機内で、請求項11に記載の茶濃縮物を熱水で希釈すること、および前記茶を分配することを含む、方法。
- 請求項11に記載の茶濃縮物を容器に充填しているか、または充填するように適合されたリザーバと、前記茶濃縮物を熱水と接触させて、それにより茶を生成するための手段とを有するインスタント茶自動販売機。
- 請求項11に記載の茶濃縮物があらかじめ充填され、好ましくは請求項14の前記自動販売機で使用するためのリザーバ。
