Claims (11)
- 根を付けたままの韃靼ソバ草を乾燥して、韃靼ソバ草乾燥物を得る韃靼ソバ草乾燥工程と、
前記韃靼ソバ草乾燥物を凍結乾燥して、韃靼ソバ草凍結乾燥物を得る韃靼ソバ草凍結乾燥工程と、
エノキを乾燥してエノキ乾燥物を得るエノキ乾燥工程と、
前記エノキ乾燥物を凍結乾燥して、エノキ凍結乾燥物を得るエノキ凍結乾燥工程と、
前記韃靼ソバ草凍結乾燥物と、前記エノキ凍結乾燥物とを重量比で1:1〜2:1の範囲で混合した混合物を焙煎して、韃靼ソバ草焙煎物およびエノキ焙煎物を得る焙煎工程と、
前記韃靼ソバ草凍結乾燥工程の前に前記韃靼ソバ草乾燥物から根を除く工程、または、前記焙煎工程の前に前記韃靼ソバ草凍結乾燥物から根を除く工程と、を含み、
前記韃靼ソバ草乾燥工程は、天日乾燥する工程が含まれ、
韃靼ソバ草の茎、葉の焙煎物を含む前記韃靼ソバ草焙煎物および前記エノキ焙煎物を含有し、ケルセチンを含有することを特徴とするソバ原料含有食品組成物の製造方法。 - 前記韃靼ソバ草は、発芽から開花直後までの期間に採集された前記韃靼ソバ草であることを特徴とする請求項1に記載のソバ原料含有食品組成物の製造方法。
- 前記韃靼ソバ草には、韃靼ソバの実を含めず、韃靼ソバの実由来の前記韃靼ソバ草乾燥物、韃靼ソバの実由来の前記韃靼ソバ草凍結乾燥物、韃靼ソバの実由来の前記韃靼ソバ草焙煎物を含めないことを特徴とする請求項1または請求項2に記載のソバ原料含有食品組成物の製造方法。
- 前記韃靼ソバ草焙煎物と、前記エノキ焙煎物とを粉砕して粉末にする粉砕工程が含まれることを特徴とする請求項1から請求項3いずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 少なくとも、前記韃靼ソバ草凍結乾燥工程により、ソバ原料含有食品組成物100gあたりのルチンを、3000mg以上にすることを特徴とする請求項1から請求項4いずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 前記韃靼ソバ草乾燥工程において、前記韃靼ソバ草を、水分量が20%以下になるまで乾燥することを特徴とする請求項1から請求項5いずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 前記韃靼ソバ草凍結乾燥工程において、前記韃靼ソバ草乾燥物を、水分量が10%以下になるまで凍結乾燥することを特徴とする請求項1から請求項6のいずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 前記エノキ乾燥工程において、前記エノキを、水分量が30%以下になるまで乾燥することを特徴とする請求項1から請求項7のいずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 前記エノキ凍結乾燥工程において、前記エノキ乾燥物を、水分量が10%以下になるまで凍結乾燥することを特徴とする請求項1から請求項8のいずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 少なくとも、前記韃靼ソバ草乾燥工程により、ソバ原料含有食品組成物に、前記ケルセチンを含むことを特徴とする請求項1から請求項9のいずれか一項に記載のソバ原料含有食品組成物の製造方法。
- 前記天日乾燥する工程において、前記韃靼ソバ草を、水分量が30%になるまでの間、発酵させることを特徴とする請求項1から請求項10のいずれか一項に記載のソバ原料含有食品組成物の製造方法。
