モデルを単純化するために、本発明によるタンパク質に富む微細藻類バイオマス組成物の全臭気に最大の影響を及ぼす化合物、すなわち極度に低い嗅覚閾値を備える化合物を保持することが決定される。
− 許容される:これらはバッチ111、92、12、112、43、33、33、81、14、44、82及び34である;
− 許容されない:これらはバッチ83、84及び85である。
Claims (9)
- タンパク質に富む微細藻類バイオマスの組成物の官能特性を決定するための方法であって、11種の揮発性有機化合物の含有量を決定する工程を含み、前記11種の揮発性有機化合物がペンタナール、ヘキサナール、1−オクテン−3−オール、2−ペンチルフラン、オクタナール、3,5−オクタジエン−2−オール(または3−オクテン−2−オン)、3,5−オクタジエン−2−オン、ノナナール、2−ノネナール、(E,E)−2,4−ノナジエナール及びヘキサン酸であり、前記微細藻類バイオマスがバイオマスの乾燥重量で50%を超えるタンパク質を含むこと、及び前記微細藻類がクロレラ属の微細藻類であることを特徴とする方法。
- 前記11種の揮発性有機化合物の含有量が、SPME/GC、好ましくはSPME/GC−MSによって決定される、請求項1に記載の方法。
- 前記11種の揮発性有機化合物の含有量が、SPME/GC後のクロマトグラフィーピークの表面積によって決定されることを特徴とする、請求項1または請求項2に記載の方法。
- 前記11種の揮発性有機化合物の含有量、具体的には前記11種の揮発性有機化合物に対応するクロマトグラフィーピークの表面積が、それに対して官能特性が特に許容されない、または許容されると規定される、タンパク質に富む1種以上の基準微細藻類バイオマスの表面積と比較されることを特徴とする、請求項1ないし請求項3のいずれか一項に記載の方法。
- タンパク質に富む微細藻類バイオマス組成物の官能特性を評価することを可能にする、揮発性有機化合物の分析プロファイルを規定するための方法であって:
− a) 許容される及び許容されない官能特性の2つのコントロールを含む微細藻類バイオマス組成物を少なくとも15人の感覚パネルによる官能特性の評価と結び付ける第1マトリックスの構築、
− b) 上記と同じ、ステップa)の許容される及び許容されない官能特性の2つのコントロールを含む微細藻類バイオマス組成物と揮発性有機化合物の分析プロファイルによる前記組成物の特徴を関連付ける第2マトリックスの構築、及び
− c) 最適化された官能プロファイルを有する組成物を揮発性有機化合物の分析プロファイルによって特徴付けることができることに基づいて関連モデルを生成するために第1マトリックスと第2マトリックスとを相関させること
を含み、
最適化された官能プロファイルは、前記微細藻類バイオマス組成物を含む食品調製品の官能特性を損なうオフノートが存在しないことを示し、
− 前記微細藻類バイオマスが、バイオマスの乾燥重量で50%を超えるタンパク質を含むこと、及び前記微細藻類はクロレラ属の微細藻類であることを特徴とする方法。 - ステップa)の官能特性の評価が、
− 次の臭気:野菜、マッシュポテト、ストック、酸敗したバター、チーズ、堆肥、発酵、ピーナッツ及びペンキ;並びに
− 次の色:黄色及び緑色、
を含む記述子の分析を含むことを特徴とする、請求項5に記載の方法。 - タンパク質に富む微細藻類バイオマス組成物の官能特性を決定するための方法であって、4種の揮発性有機化合物の含有量を決定する工程を含み、前記4種の有機化合物が、3,5−オクタジエン−2−オール(または3−オクテン−2−オン)、1−オクテン−3−オール、3,5−オクタジエン−2−オン及び(E,E)−2,4−ノナジエナールである工程、並びに3,5−オクタジエン−2−オール(または3−オクテン−2−オン)、1−オクテン−3−オール、3,5−オクタジエン−2−オン及び(E,E)−2,4−ノナジエナールの個別フレーバー値の合計から全フレーバー値を計算する工程を含み、並びに、
化合物xのフレーバー値が、化合物xの濃度/化合物xの嗅覚閾値であり、
前記微細藻類バイオマスが、バイオマスの乾燥重量で50%を超えるタンパク質を含むこと、及び前記微細藻類がクロレラ属の微細藻類であることを特徴とする方法。 - 許容される官能プロファイルを有するタンパク質に富む微細藻類バイオマス組成物を選択するための方法であって、前記官能特性が請求項1ないし4及び請求項7のいずれか一項に記載の方法によって決定されること、及び前記組成物は、請求項7に記載の方法によって計算された前記全フレーバー値が官能的に許容されない基準微細藻類バイオマス組成物の全フレーバー値に比較して0〜40%である場合に選択されることを特徴とし、前記微細藻類バイオマスがバイオマスの乾燥重量で50%を超えるタンパク質を含むこと及び前記微細藻類がクロレラ属の微細藻類であることを特徴とする方法。
- 請求項1ないし請求項4及び請求項7のいずれか一項に記載の方法であって、前記微細藻類が、クロレラ・ブルガリス(Chlorella vulgaris)、クロレラ・ソロキニアナ(Chlorella sorokiniana)及びクロレラ・プロトセコイデス(Chlorella protothecoides)よりなる群から選択され、より好ましくはクロレラ・プロトセコイデス(Chlorella protothecoides)であることを特徴とする方法。
