Description
飼料に添加するカロテノイド色素として従来からアスタキサンチンの化学合成品が広く一般に使用されている(Critical Reviews in Food Science and Nutrition, 46: 185-196 (2006))。天然由来のカロテノイド色素をサケ類の肉色改善に利用した例としては赤色酵母Phaffia rhodozymaの生産するアスタキサンチン(特表平8-508885)、藻類Haematococcus pluvialisの生産するアスタキサンチン(米国特許4,871,551)、トウガラシ成分であるカプサイシン類(特開2005-27662)が知られている。また、サケ類ではないがマダイの体表における色調改善を試験するためにバクテリアParacoccus carotinifaciens E-396株(FERM BP-4283)の生産するカロテノイド色素が使用された例が知られている(特開平9-308481)。さらに、カロテノイド化合物を含有する微生物培養沈殿物よりなる飼料添加用色素含有物も知られている(特開2001-95500)。
合成品区の魚肉は不自然な赤色であるのに対し、発酵品区の魚肉は穏やかな赤橙色を呈していた。
Claims (6)
- アスタキサンチン、フェニコキサンチン、カンタキサンチン及びアドニキサンチンを少なくとも含むカロテノイド色素を混合した飼料でサケ類を飼育することを特徴とする、穏やかな赤橙色の肉色を有するサケ類を生産する方法であって、
前記飼料中のカロテノイド色素は、Paracoccus属に属するバクテリアの発酵により産生された天然品を含むものであり、
前記飼料中のアスタキサンチン含有量が20〜100mg/kgであり、フェニコキサンチン含有量が5〜80mg/kgであり、カンタキサンチン含有量が0.5〜25mg/kgであり、アドニキサンチン含有量が0.2〜20mg/kgであり、
生産したサケ類は、その魚肉中にアスタキサンチン及びフェニコキサンチンを含むことを特徴とし、その魚肉中にカンタキサンチン及び/又はアドニキサンチンを含むことを特徴とし、
生産したサケ類の魚肉におけるアスタキサンチン含有量に対するフェニコキサンチン含有量の比が5〜80%であり、生産したサケ類の魚肉におけるアスタキサンチン含有量に対するカンタキサンチン含有量の比が0.5〜20%であり、かつ、生産したサケ類の魚肉におけるアスタキサンチン含有量に対するアドニキサンチン含有量の比が0.2〜40%であることを特徴とする、前記方法。 - 飼料中のカロテノイド色素が化学合成品を含むことを特徴とする請求項1に記載の方法。
- バクテリアは、配列番号1に記載の塩基配列と98%以上の相同性を有する塩基配列を含む、16SリボソームRNAに対応するDNAを有するバクテリアである請求項1に記載の方法。
- バクテリアが、E−396株(FERM BP−4283)又はその変異株である請求項3に記載の方法。
- サケ類がアトランティックサーモン、ニジマス、ギンザケ、キングサーモン、ベニザケ、カラフトマス、サクラマス、シロサケ、サツキマス及びブラウンマスからなる群から選ばれる少なくとも1種である請求項1〜4のいずれか1項に記載の方法。
- サケ類がアトランティックサーモン、ニジマス、ギンザケ及びキングサーモンからなる群から選ばれる少なくとも1種である請求項5に記載の方法。
