Claims (1)
- β−グルカンを含有する穀物を原料として醪を調製するに際し、製麹を行わず、原料に主要酵素としてα−アミラーゼを含有する液化酵素、およびグルコアミラーゼを含有する糖化酵素を同時に作用させるとともに、両酵素の作用時間を数時間以内に調整した後、煮沸処理を行って酵素を失活させ、最終製品中に多量のβ−グルカンを残存させることを特徴とするβ−グルカンを主体とする水溶性食物繊維を含有する食酢の製造方法。
