Claims (5)
- 平均含水率が20重量%以上32重量%以下の未発芽状態の籾を、空気中で52℃以上80℃以下の処理温度に加熱し該処理温度の範囲で所定時間にわたって保温し、前記籾の胚乳部においてγ−アミノ酪酸を富化させる栄養富化工程を有することを特徴とする栄養富化米製造方法。
- 未発芽状態の前記籾は、収穫から前記栄養富化工程までの間、平均含水率が20重量%以上32重量%以下に維持されている生籾であることを特徴とする請求項1に記載の栄養富化米製造方法。
- 未発芽状態の前記籾に水分を加える加水工程を、前記栄養富化工程の前にさらに有することを特徴とする請求項1に記載の栄養富化米製造方法。
- 前記加水工程は、未発芽状態の前記籾を、0℃よりも高く10℃以下の水に浸漬する低温浸漬工程、または45℃以上52℃未満の水に浸漬する高温浸漬工程の少なくとも一方を有することを特徴とする請求項3に記載の栄養富化米製造方法。
- 前記加水工程は、前記低温浸漬工程及び前記高温浸漬工程が、少なくとも1回ずつ実施されることを特徴とする請求項4に記載の栄養富化米製造方法。
