Claims (10)
- ビネガー及び濃縮果汁を混合することによって香酢を製造する方法であって、該方法は、前記ビネガーの水性部分を少なくとも部分的に凍結することによって、前記ビネガーを、全体酸度(酢酸として表示)少なくとも15%(g/100ml)に凍結濃縮し;濃縮したビネガーと前記果汁とを、全体酸度(酢酸として表示)少なくとも6.0%(g/100ml)及び糖含量少なくとも400 g/lを有する香酢が得られるような比で混合する工程を包含することを特徴とする香酢の製法。
- さらに、濃縮ビネガー及び濃縮果汁の混合物を撹拌下で加熱して、前記混合物を濃縮する工程を包含する請求項1記載の方法。
- ビネガーがワインビネガーであり、果汁がブドウ果汁である請求項1又は2記載の方法。
- 凍結濃縮工程を、窒素又は二酸化炭素を使用して行う請求項1〜3のいずれか1項に記載の方法。
- 濃縮ビネガーを、添加アルコールの不存在下で製造する請求項1〜4のいずれか1項に記載の方法。
- 最終の香酢が、バルサミコ酢である請求項3〜5のいずれか1項に記載の方法。
- ビネガーの凍結濃縮工程が、氷の結晶が得られるまでビネガーを冷却し、真空濾過を介して、残りの液体から氷の結晶を分離することを含むものである請求項1〜6のいずれか1項に記載の方法。
- さらに、果汁を凍結濃縮する工程を包含する請求項1〜7のいずれか1項に記載の方法。
- 請求項1〜8のいずれか1項に記載の方法によって得られた香酢であって、全体酸度(酢酸として表示)少なくとも6.0%(g/100ml)及び糖含量少なくとも400 g/lを有するような比で混合される凍結濃縮ビネガー及び濃縮果汁からなることを特徴とする香酢。
- 凍結濃縮を介して得られ、全体酸度(酢酸として表示)少なくとも15.0%(g/100ml)を有する濃縮ワインビネガーの、濃縮ビネガー及び濃縮果汁を含有する香酢の製造における使用。
