Abstract

Ένα αρωματικό ξύδι παράγεται από ξύδι κρασιού ή φρούτων και βρασμένο ή συμπυκνωμένο μούστο, με συμπύκνωση μέσω ψύξης του ξυδιού σε ένα τέτοιο σύστημα (1) και ανάμιξη αυτού με συμπυκνωμένο μούστο ώστε να ληφθεί ένα αρωματικό ξύδι οξύτητας τουλάχιστον 6 γρ./λίτρο και υψηλή περιεκτικότητα σακχάρων χωρίς την προσθήκη βελτιωτικών.
