Abstract
Description
[新鮮な食用油における界面張力の測定]
・図4(a)に示すように、新鮮な食用油にオレイン酸10−3Mを添加しても、電場印加に伴う界面張力の変化がほとんど認められなかった。
・一方、図4(b)及び図5〜図8、並びに図9〜図12に示すように、新鮮な食用油にオレイン酸ナトリウム10−3Mを添加した場合には、電場を印加すると、界面張力の低下が確認され、界面張力の低下率は、水相のpHに著しく依存する。
・図4(b)及び図5〜図8に示すように、pH7.2〜7.4のリン酸生理食塩水を水相とした場合、交流電場を印加したのみでは界面張力の低下は認められず、直流電場を印加すると、界面張力の低下が確認される。
・一方、図9〜図12に示すように、pH5.4〜5.6の生理食塩水を水相とした場合、交流電場を印加したのみでも界面張力の低下が認められ、交流電場の周波数の低下に伴い、界面張力の低下率が増大する傾向が見られる。
・また、図11に示すように、pH5.4〜5.6の生理食塩水を水相とした場合において、交流電場に+100Vの直流電場をオフセット電場として印加すると、60%以上の界面張力の低下が確認され、図12に示すように、交流電場に−100Vの直流電場をオフセット電場として印加しても、15%程度の界面張力の低下に留まった。

Claims (9)
- 振動を発生する一対の振動発生部を備える成分制御装置による成分制御方法であって、前記振動発生部間に振動を発生させて、該振動発生部間に配置された対象物内の成分を制御する、成分制御方法。
- 前記振動発生部は、電磁波を発生する電極であって、前記電極間に電磁波を発生させて、前記対象物の水分活性を制御する、請求項1に記載の成分制御方法。
- 前記振動発生部は、前記電極間に電磁波を発生させて、前記対象物の水相と他相との界面分極を増大させて該水相と該他相との界面張力を低下させるとともに、該対象物内の水分を連珠状に結合させる、請求項2に記載の成分制御方法。
- 交流電場に直流電場をオフセット電場として印加して、前記対象物の水相と他相との界面分極を増大させて該水相と該他相との界面張力を低下させるとともに、該対象物内の水分を連珠状に結合させる、請求項3に記載の成分制御方法。
- 前記交流電場に、前記他相に対して前記水相側に略+100Vの前記直流電場をオフセット電場として印加して、前記対象物の水相と他相との界面分極を増大させて該水相と該他相との界面張力を低下させるとともに、該対象物内の水分を連珠状に結合させる、請求項4に記載の成分制御方法。
- 前記電磁波の周波数は、略10kHz〜略500kHzである、請求項2に記載の成分制御方法。
- 前記電磁波は、長波である、請求項6に記載の成分制御方法。
- 前記対象物内の水分は、結合水と、自由水と、に分けられ、前記対象物内の水分のうち、前記自由水を連珠状に結合させる、請求項3に記載の成分制御方法。
- 振動を発生する一対の振動発生部を備え、該振動発生部間に振動を発生させて、該振動発生部間に配置された対象物内の成分を制御する成分制御装置。
